Yup, it sounded awesome, but I got absolutely nothing done this weekend, including breaking my only-eating-when-I-realize-it's-been-9-hou
rs streak. I don't think I'm quite over being sick, but I know this isn't good for me either. Going back to school tomorrow should help. At the very least, I'll be back to my slimfast optima and fiberone granola bar breakfast. Tonight it was italian sausages, pineapple, and grapes. At least I got a great bunch of grapes at Walmart, even though my beloved cherries went out of season (and out of stores) 5 weeks ago.

Oh yeah, dinner. I should think about that soon, lol. I had a turkey-pepperoni (70% less fat!) and low-fat mozzarella pizza with chunky marinara for lunch, and I think I may test out my rice maker/veggie steamer for dinner tonight with green beans. Maybe I'll broil the chicken. Hmm...

Today, I had spinach and mushrooms in my breakfast burrito and I had Caesar salad w/chicken for dinner (dressing on the side, which I'm very frugal with), so I had a LOT of romaine lettuce with my dinner.

I'm going to try and make roasted red pepper hummus tonight. I know I saw the recipe somewhere, just not sure which website and where. So I guess I have to find it first, lol. I can't find tahini paste anywhere down here for the hummus, but someone said a little bit of sesame seed oil with the olive oil will provide the taste, and I'm not too fond of the taste anyway, so I may just make imitation hummus without it.

Other than that, um, I had jalepeno potato chips, lol. I've been sick, tired, and busy, so food has just not been happening this week. I don't tend to get hungry when I'm sick (I'll spare you the details) or when AF is in town, and this time I had one right after the other, so other that occasional "I really should eat something" snacks, I've mostly had juice. Oh, but hey, it was the V8 juice (splash or twister, something like that) that's half a serving each fruit and veggie per glass, so I guess I've had about 1 1/2 servings of veggies a day.

Friday night-big salad with chicken
Saturday-2 servings of corn
Sunday-lettuce/tomatoes on sandwich, 1/2 c. of salsa
Monday-lettuce on sandwich, broccoli for dinner

HELLO, I found a recipe for "fried" okra that's actually baked. I haven't tried it yet, but I'll post it over in the recipes section.

I'll hop in here and try to remember my veggies for this week.

Mon-Carrots and beef stew (potatoes, carrots, celery, and shallot) for lunch
Tues-carrots for lunch
Wed-carrots for lunch
Thurs-carrots for lunch
Fri-carrots for lunch
Sat-carrots & radishes for lunch

I can't remember my dinners for this week, but I don't think any of them contained veggies. I bring my lunch to school with me, so that's pretty predictable. I have a Mr. Bento container (check it out on Amazon, it's totally worth the money) so it keeps 1 water-sealed and one loosely sealed container hot or cold (and I mean hot, my stew's steaming at lunch) and 2 regular tupperware-style containers room temperature. I pack carrots, dried apricots, and Laughing Cow swiss, so those are always predictable, but dinner is where I run into problems. I think I had corn one night this week.

Well.... I had hashbrowns for breakfast today (among other things that weren't great for me either).

I've come to the realization that I do well with the healthy choices when things around me are going smooth and predictable. However, as the last few weeks have proven, when life is in a hurry so I am as I try to keep with it all. This hurriedness causes a less attentive approach to food and lifestyle choices resulting in less than ideal food and exercise (or lack there of) commitments.

It was a wild day, so I decided to just go for the fries (though it was a sit down restaurant) and yep, they were good. Fortunately, I generally only eat about half of what is served. emoticon

Ok, Wednesday was not such a good day. No veggies (unless you count french fries). Yesterday was much better though. Had 2 servings of snow peas with dinner and 1 of mixed veggies (cabbage, carrots) with lunch.

I'm on a roll with the veggies, even if is the same ones. Spinach and Mushrooms in the breakfast burrito and spinach on my tuna sandwich and carrot sticks at lunch. Not sure about dinner.

The Spinach I bought in a bag almost two weeks ago has held up very well. Alas, I'm on the second package of mushrooms and really disappointed. Loose mushrooms are looking better.

OK, now I'm really hungry!!! And I still have one more meeting before I can eat dinner!!! Acckkkk!!!

OK, I had some broccoli with my lunch, which I just noticed is becoming a recurring theme for me. Whoever mentioned sugar snap peas, thank you. I just remembered I have a pack of 'em in my freezer. Now I know what I'm having for dinner!

And carrot cake is sweet. Therefore, it should count as fruit! emoticon

I've never tried the steamer bags, but they sound like something I'd use a lot. I LOVE those frozen veggies that come in the steamer packs. That's one thing I don't worry about if I eat the whole pack, since they're pretty low in calories. Hi all. Well tonight I'm having corn with dinner and earlier today I had a spinach appetizer.

Sandy - At first I thought the bags might be cost prohibitive, but the more I see about them, the more I'm thinking of trying them. I have some fresh corn-on-the-cob and think it would be great to just steam them in the microwave... nothing to clean up. I love the frozen veggies that you can get in the steam bag - they're great. I'll be interested to hear how your broccoli goes.

I know what you mean about the fries getting nasty. An aquaintance of mine used to throw a fit if her fries weren't fresh out of the basket...it was truly embarassing! Either you scarf them down, or toss em, because when they start getting hard, they've lost their use as a food source. That's when I call them LARD STICKS!

Has anyone tried the Ziplock steaming bags? There aer other brands,too. I used them for sweet corn, and I liked the results. My Mum said said she seasons fish and puts a handful of veggies in one of those bags,and, VOILA! Supper is ready in less than 5 minutes! I'm gonna try putting my broccoli in one,and see how it works.

Fruit was the easy challenge for me. I love my fruits. I'm not so good with getting my veggies in though.

I did buy some bags of mini carrot sticks this afternoon and other veggies too. So I've taken the first step by purchasing veggies. LOL. Now if I can follow through and eat them. emoticon

emoticon I figured it was teasing. But, then I realized during the week, with the spinach on the sandwich and the carrot sticks, I was doing pretty good in the department. I think it might be easier (gasp) for than fruit.

And, alas, no ketchup for the fries... hard to do in the car. Wouldn't it be nice if it was a veggie? It was a small fry though. Usually, I don't eat all of them, cause when they get cold they are nasty. Not today - I ate them while they were hot!

Did you dip those fries in Catsup? One of the President's made the statement when he was discussing school lunches, that catsup was a vegetable. I think it was Reagan, but I'm not for sure.

I was just giving HELLO a bad time...I don't think she took it to heart. She should "get me" by now!

Hey, one isn't a wimp challenge. Yesterday, I had spinach on my sandwich and baby carrots with it, plus I put spinach and mushrooms in my breakfast burrito.

Today isn't looking good, unless french fries count. emoticon

I knew veggies were coming! Too bad it couldn't have been a month ago when I was eating 8 servings per day! Farmers Market.

Is there a minimum amount of servings we should be consuming for the challenge? I'm like the kid in class asking if there's an assignment for over the weekend! OK...just noticed it was one serving. What kind of wimp challenge is that??? One that I can do!

We have done pretty well with the fruit challenge. Let's shake it up a little bit and see if we can do the same with vegetables.

September 9 - September 15 the challenge is to have one serving of vegetables each day.

I will admit at the beginning, this one will be a definite challenge for me! I love fruit, but don't do so well on the veggies.
