This has been an off week for me. I haven't really stuck to my dinner plan and while I may be eating dinner at home, it isn't necessarily cooking. I'm sure next week will get back to normal.

March meatless month,forget that!!I am doing good to have one meatless night per week.Last night I fixed fried cabbage and bacon for myself ,it was good, we had lunch at Olive Garden and I ate mostly the salad and a couple of breadsticks brought home the main meal for lunch today.I do love salads but they are a real hassle to make the way we like,hubby doesn't eat much salad so I don't make it as often as I should.Nice day here in S.Oregon yesterday.Today am doing a clay kiln firing and should keep very busy next week with my clay projects.Happy Sunday to all of you, HR in Oregon

Go you! I didn't even know about a Meatless March challenge, but I am trying to do the Meatless Monday's (though sometimes I just forget). I just got a vegetarian cookbook and made sure that I had what I needed on hand for two of the recipes. Hoping to try them this week. Maybe get some new recipes in my repertoire.

Last week wasn't stellar for me, but I'm hoping this coming week I can really get back on track.

Wow! Last night was red beans and rice for me. I had the salad bar today and don't think I did too badly. Snacks were reasonable as well.

I'm really liking what I see for the small crockpots. Mine baby crockpot cleans up fairly easy, but it's just me so the only person who can get annoyed with a tough clean job is me. :)

I've found a blog that contains recipes for the small crockpots and I'm getting better at reducing recipes, so I think that would be a really good option for me.

The 1.5 qrt I have has a removable crock so that is nice. My little dipper didn't and DH got mad the last time I made something in it that was hard to clean. He cleaned it up and stuck in the donation box. Since he does most of the dishes I can't really complain emoticon I use a 4qt crockpot to make beans.

Anyhow, I ended up failing on lunch yesterday. Today I am going to try for Panera as that will at least let me get soup and salad. Tonight is a frozen skillet meal thing from Bertolli. At least it will be easy. Last nights dinner was on track... black beans and rice.

Good for you Neelixnkes! I've also done pretty good this weekend. Just tuna sandwiches for lunch, but I'm really enjoying them and it's better than eating them out.

Last night I did my first overnight recipe in my baby (1 qt crockpot) for Red Beans and rice (rice will be cooked separately). I think I'll be doing this more often, but I've done a little looking and think I will get a 1 1/2 quart slow cooker that has the two speed settings as this one only has one. I've had it for over 20 years as it was a college graduate present. I don't think they make them anymore.

I, too, have lunch out tomorrow, but will keep it light and then plan on taking lunch and eating at home for the rest of the week.

Did pretty well over the weekend. We had lunch out on Saturday but I had started turkey chili earlier in the day so we had chili for dinner. Sunday DH went out to breakfast but I ate all 3 meals at home. I used up some old sandwich steak from the freezer for lunch to make steak tacos and then I made a new to me recipe for sesame chicken that is a keeper. I have planned our dinners for the rest of the week and the only night I don't cook at home we are out with friends so I think that is good. We have enough things for lunches this week as well but tomorrow I will be out for lunch as I have a noon appt and then one at 330 so I will need to find someplace to park myself for awhile.

Haven't been doing that well this week as it has been one where DH hasn't been home and we had a birthday in our family also. I took out chicken to make the Sesame Chicken I was supposed to make on Super Bowl Sunday sometime this weekend. Lunch today is leftovers from last week that was supposed to be dinner the other night. I did cook on Valentine's Day :)

Not sure what dinner will be tonight but I'm thinking soup or pasta. I think I am going to make a batch of chili this weekend as well so that we have some goto dinners in the freezer as I think other than blackbeans we don't have any ready to grab food left. Last week was really good for eating at home so I'm not going to fret about it.

Trying to figure out what to do with the pie crusts I bought awhile back. I was planning on making a ricotta sausage spinach pie so I might try that or I might make quiche. But, planning for next week is for later on this weekend. Hope that everyone is doing well!

I rarely go out to eat, so I cook/prepare almost all of my meals at home. Breakfast is always a home-cooked meal during the weekdays and if I'm home on the weekends and not traveling. It's either some varation of eggs or egg whites, potatoes, and toast or grits, some protein, and toast.

Way to go Neelixnkes! I had dinner out twice last week w/ friends, but the rest of the meals were at home or packed lunches. I'm happy with that. Especially since I'm getting the routine of meals at home on the weekend which were my challenging times in the past.

Did really well this week following the plan that I set up. This next week may be more of a challenge but I think I came up with a compromise that will work. Last night was the only night that I didn't cook at home last week for dinner. We had breakfast and lunch at home though so that was good since we often eat out several times on the weekend. Today I made french toast with blueberry/coconut topping and will be making a sparkrecipe for Sesame chicken for dinner.

I haven't necessarily been great at cooking lately but have been eating from the pantry more. My personal goal is to cook at home/eat from the pantry 5 dinners and 5 lunches a week so this team goal is a good fit. Last night I made some nacho beef and tonight I will repurpose that into another meal.

The crockpot recipe you are talking about is a SP recipe. It's called "black bean chicken" and it's made with 2 cans of black beans, 1/2 cup brown rice, 16 oz jar of salsa, and 1 lb. chicken breasts. The thing I like about it the most is that you don't even have to thaw out the chicken breasts. Just pour everything over them (undrained) in the crock pot and let cook on low for at least 6 hours. It's one of my favorites. I buy the Mission Carb Balance whole wheat tortillas and put a little fat free cheese on mine. Yum!

My soup turned out great. Week One of my new year I made PIG OUT soup; Week Two I made homemdae CHICKEN NOODLE (with no yolk egg noodles); Week Three (this week) I made a delicious MINESTRONE soup (awesome) and next week I will be making a CHUNKY TURKEY VEGETABLE.

Soup has been my supper every evening - homemade soup is so much more flavorful than canned soup and so much better for you. Thanks for asking. I have entered my recipes in the SP database. How else would I know how to count them & track them? emoticon

emoticon Love that new recipes are being tried! Please remember there is a Recipes forum as well as a Try New Recipe Challenge.

I'm going to bring this thread back on track and that is simply to discuss success with cooking meals at home 3 times per week. Doesn't have to be a new recipe and we don't need to really say what we are cooking, but are you cooking at home.

If so, have you signed up for the challenge?

In one of my other teams, somebody had posted a recipe they tried, which I tried but adapted to what I had on hand and found it to be nummy. In the slow cooker, I put 1 can of red kidney beans, 1 can of black beans (undrained), 1 jar of salsa, 1/2 c. wild race, 1 lb chicken breasts. Let it cook all day and the chicken truly fell apart. I don't know how the other gal ate it, but I decided it looked like good makings for a burrito type thing. So I used a 100-cal tortilla shell, put some of this down the middle, added a little bit of cheese, lettuce and a dab of low-fat sour cream. It was quite tasty.

Bittygirl51, your recipe for the salad with pineapple and almonds sounds nummy. How did the new soup recipe turn out for you?

I tried two new recipes today and they both were delicious. The potatoes were a real treat since I don't eat potatoes often. For your perusal:

CRISPY RANCH CHICKEN

Ingredients

2 cups of Rice Krispies
1/2 cup grated parmesan cheese
1 envelope (1 oz.) Ranch buttermilk salad dressing mix
2 egg whites, beaten
8 skinless, boneless chicken thighs (about 5 oz. each)

Preheat oven to 350. Spray a large baking sheet with nonstick cooking spray. Combine the rice cereal, parmesan cheese and ranch salad dressing mix in a bowl.

Place beaten egg whites in medium bowl. Dip each chicken thigh in the egg whites and then in the cereal mixture to coat evenly.

Arrange the coated chicken on the prepared baking sheet. Bake until golden and juices run clear when chicken is pierced with a knife, 20-25 minutes. Serve hot.

ROASTED POTATO MEDLEY

Ingredients

2 sweet potatoes
4 Yukon Gold potatoes
8 new potatoes
1 t. tarragon
1/8 t. salt
1/8 t. black pepper


Directions

Preheat oven to 425. Peel and cube the sweet potatoes and Yukon Gold potatoes. Scrub the new potatoes and cut into cubes. Place the potatoes in a lge. saucepan. Add enough lightly salted water to cover the potatoes. Bring to boil and cook the potatoes for 3 minutes. Drain thoroughly. Spread the potatoes in a single layer on a large cookie sheet. Drizzle the potatoes with olive oil and sprinkle with tarragon, salt and pepper. Roast the potatoes until browned and crisp, about 25 minutes. Serve immediately.

Serving Size: 6 servings

Tonight I made baked pork chops with left over mashed potatos and a mixed salad with low fat ranch dressing.And of course apple sauce.

I am making a pot of Italian beans with 2 cups Great Northern Beans, dried garlic, dried onion, 3 chicken breasts and a 26 oz. can of herb and garlic tomato sauce. This is done from scratch and will be packaged in 1/2 cup portions and frozen for work and home.

My wife saw this Wolfgang Puck pie maker on HSN and it's non-stick. I played with it tonite and made broccoli/cheese/egg pies. There's a cutter that comes with it and it cuts out 2 bottoms from a 9" pie crust, you have to do some rearranging after the first cut, then put it in the well and fill it up and close it. No oil needed. Took about 12 mins to cook and man were they good. I was planning on making 2, one for dinner for me and one for breakfast. My wife looked at it and asked if she could have a bite and next thing ya know, I'm out of breakfast!!! LOL She wanted a bacon sandwich for dinner. So, I got her to eat healthy, too!!!

Today I made a healthy version of Jason's Deli chicken salad with fat free mayo, pineapple tidbits & almond slivers. Yum! I also tried a new recipe for a Garden Chowder. It has carrots, sweet potato, corn, & spinach in it. Have tried it yet but am looking forward to supper.

My husband doesn't "diet" and loves tacos. So after church today, I made him tacos and I had the most delicious taco salad! It had 2 cups of chopped romaine, 1/2 c. chopped carrots, 1/4 c. chopped tomato, 1/2 c. fat free refried beans, 1/2 c. 93/7% lean ground beef, 1/4 c. fat free shredded cheese, 2 T. fat free ranch dressing, 4 T fat free salsa. I broke up and spread on top 18 baked Guiltless Gourmet chil lime corn chips!

We ate at my brother-in-law's last night. We had a wonderful home-cooked meal prepared by his wife.

My breakfasts are usually oatmeal (I need to learn to add some protein to that meal). This weekend has not been good for cooking otherwise, have had too many projects going. I had fast food for lunch and leftover homemade pancakes for supper. I'm thinking of trying something new with cottage cheese for a snack later. Generally speaking, I do not like cottage cheese,but it was cheaper than ricotta. So I am going to try a recipe I saw on Sparks that used ricotta, but use cottage cheese instead. I hope it works, there are some good nutrients there.

I made dinner at home last night and didn't think about what I was doing and cooked for at least 4 or 5...LOL So, dinner tonight was leftovers. It was cabbage with noodles and onions fried in evoo. MMMMMM..... This is a change-my wife likes pizza or wings or subs alot for dinner.

Even when I eat at work it is from home. I am a freeze-aholic. I freeze my water so that it is cold when I get to it at work for break. Today I had oatmeal with frozen cherries and one piece of bacon.This is all mixed together and microwaved. I read my email with breakfast and it usually ends up being reheat once. For lunch/supper I am having a chicken pot pie at home while I am typing this. Snack for evening is undecided. I know you should not eat and do something else, but mine endes lasting for 30 minutes to an hour while I work. I have to chew each bite completely and make sure there are no crumbs left in my mouth before I get another. At work it is portion controled, because it has to be wolfed down in 20 minutes.

I ate lunch out yesterday. I cooked veggies for dinner last night. Today I am going to bake some chicken thighs and some veggie. I just had a salad for lunch today.

Had lunch at home today. Actually, ate dinner at home last night. Used to be I got takeout on the weekends, but now not so much anymore. At any rate, brunch at home was pancakes and I enjoyed them.

A new challenge for 2012 is to cook 3 meals at home per week. It doesn't have to be anything fancy and can be as simple as re-heating leftovers. The goal here is simply to eat at home.
