I see this is not frequently visited but I have a "food review" to share. I love Bob's Red Mill products and picked up a few new ones to try. I bought the Gluten Free Pizza Dough Mix. I'm trying to find ways to still enjoy my favorite foods, like pizza, in healthier ways. I have to say I followed the directions exactly and it did not make a very good dough. It was very sticky and had a very bland taste, and it made a very thin crust but not crunchy.

I have made whole wheat dough before and while it's a little heavier it's much better than what this was.

We're eating lunch out today, so I need to find a vegetable recipe for tonight's dinner that's low in carbs and calories. I know there are tons out there, but. . . .Tomorrow I'm going to make Mock Fettuccine for lunch.

I am making potato soup tomorrow. I've never made it before, at least not on my own. And this recipe is different than one my mom and I used. I figure 3 new ones a month should be fairly easy for me to try. I usually only cook what I know and like. Being picky leaves little room for experimentation. But today, that stops. Experiment I shall!

I hope it turns out good. :S

I think it is sweeter than sugar. This recipe called for half sugar and half splenda so I just used the splenda blend. I haven't made them in a few months but I need to use up a bunch of cereal in our cabinet. Hopefully I can find a muffin recipe that can help with that. emoticon

Good for you! It's been about a month or so since I did a new recipe. I sometimes find I prefer just to use sugar, but I have used Splenda mixes. It is sweeter, though, isn't it?

I also finally made the bran muffins that Sparkpeople uses on some of the meal plans. The only thing I didn't like about the recipe is the Splenda. They actually are pretty sweet so if I make up another batch of batter (right now I have 3/4 of the batter left after making 24 mini muffins) I will probably cut down the amount of Splenda Blend I used in the recipe.

I'm so pleased with myself. Last night I cut down a recipe from 6 servings to 1, and I think it worked out just great! It's Sweet Potato and Chickpea Shepherd's Pie, and it's vegan. Fits perfectly for meatless March (but really, I eat very little red meat anyway). I made a couple modifications based on what I had on hand. A great one-dish meal with a side salad. I'll try to post the recipe sometime today.

Last night I had to switch my meal plan at the last minute, meaning that I had to improvise something. So I pulled out some vegetables I had in the fridge: broccoli, asparagus, onion, sweet red pepper, poblano pepper, and baby kale. I squeezed the juice of half a lime and poured out about a quarter cup of low-sodium chicken broth, then heated a tablespoon or so of toasted sesame oil in an iron skillet on medium heat. (At this point, I should have had my pasta ready to go into boiling water, but I forgot. Oops!) I threw all the vegetables except the kale into the hot oil and sauteed them for several minutes, until they were just tender, then added the juice and broth. I allowed that to come to a simmer and added the kale, covered it, then cooked it for a minute or two. Then I remembered to start the pasta water. Needless to say, the vegetables were done well ahead of the pasta. I just took them off the heat a little earlier than I had intended, left the cover on, and allowed them to stay warm and continue cooking for that last little bit. Seasonings were a little salt and pepper plus Sunny Paris, a spice blend I get from a great spice store here, Penzey's. It was a delicious, nutritious, low-calorie meal and just enough for one serving.

Hi All, I am new to this group...I love to try new recipes. The hubby and I love chili and soups. Last night I made a very simple chili from what I had in the cupboard and added corn bread and it was a nice meal.

I've learned a couple good tips for making my own chili seasoning as well from this site, much less sodium and so good! Ancho Chili powder, Garlic powder, Chili Powder, Black Pepper and Cumin...I vary the amounts depending on what I'm paring it with...love it!

I didn't add the chocolate this time, mostly because I wasn't sure the other person eating it would really like it. I'm definitely adding it in the future. One thing, with the bison, it definitely has a sweet taste. Buffalo meat has a sweetness to it that you don't get with beef. I had heard this but hadn't actually tasted the difference before.

I'm impressed! I'm always checking out chili recipes but I'm a pit picky. Did you add the chocolate? This is the second recipe I've seen that uses either chocolate or cocoa in chili. I'll be trying one of them.

I just found this topic. My first new recipe for this month was bison chili for Super Bowl dinner. I got it from Gilt Taste (an online store that has a blog/recipe section). Ruth Reichl had written about making your own chili powder and followed up with the recipe, so I decided to try both! The hardest thing about making my own chili powder was finding the dried chili peppers to toast and grind. Hahahaha. I ended up leaving out the hottest one because I couldn't find it. I can still add it if I come across it somewhere. The chili itself was delicious. I made her basic recipe with the minimum amount of chili powder, which was very tasty. With joy, I have realized any recipe counts, including those for baked goodies. Today was a new banana bread recipe.

I managed to squeeze in a 4th new recipe tonight. From the cookbook Going Solo in the Kitchen. Ehhh... Mock fettucine. I'll definitely need to use the optional sour cream next (premise is to use cream cheese instead - I suspect it's needs to be the regular cream cheese)

I'd also like to get it creamy enough to add some peas and more mushrooms next time, maybe even some shredded carrot.

New Recipe 3 for the month. I realized that any new recipe counts, including cookies! I tried a recipe from my Small Batch Baking cookbook. Broke my rule of no modifications the first time, so I'll do this one again next weekend w/out modifications to compare the original with mine. Still tasty, but they baked kind of weird and I think it's the modifications.

New Recipe 2 for the month. A modified chili recipe from the McCormicks website. I wound up subbing ground turkey for the beef and cutting it in half. Haven't tried it yet, but it smells good. Better be good as it's also lunch for part of the week.

I was playing around with Pumpkin filling for Pumpkin Pie.
I love it...
So this is what I did:

2 cans pumpkin
5 eggs
1 cup powdered milk powder
2 large tbsp of cocoa
1/4 cup Splenda brown sugar
2 pkg Stevia
large tsp of cinnamon
2-3 tsp pumpkin pie spice
1-2 tsp vanilla
1/2 tsp almond extract
Mix it all up and put in casserole to bake.... I baked about 1.5 hours at 350, stirring it after 1 hour.
then I "packaged it in 1/2 cup containers. Kept 3 in fridge, and put rest in the freezer, (we'll see how it does)
110 cal per serving....
Taste was pretty good! the cocoa changed it, I think

Tonight I made another recipe from "Big Oven". Chicken thighs with shallots, garlic, sun-dried tomatoes, fresh thyme. 30 minutes.

Tonight I made a recipe that I found in an online newsletter today. It was Mexican Chicken soup. It was really good. I had bought a rotisserie chicken at Sam's yesterday, so used part of that for the soup. I still have enough to make a chicken salad.

This past week I made Kale Sweet Potato Lentil Soup for the first time. Then I made it again!
I didn't use kale either time. The first time I used spinach, the second time collards.

We really like it.

I also made oatmeal crackers. I did not think I would like them, but I did.

I have a lot of cookbooks as well (sadly, many of them are for muffins!), but I also have a Taste of Home cookbook somewhere, so maybe I'll dig it up and try a recipe from there.

How ironic! I just got a new crockpot cookbook also (untried so far) and the Taste of Home Comfort Diet food cookbook. One recipe that I tried in there was a tuna casserole that used tomato sauce in it....which sounded strange to me but decided to try it anyway. As I didn't have tomato sauce, I used tomato soup, and I did add kidney beans also. But I have to say I am not a fan of tuna and tomato, just not a good mix for me. But I tried, so will try another one this week.

Thanks for the challenge in this regard. I have tons of unused cookbooks!

Last week I made Italian Squash Casserole from a new cookbook I got. Taste of Home Comfort Diet Cookbook. It was really good and I will be making it again. It was made with butternut squash which I had never had before.

Last week I tried Maple Glazed Meatballs in the crockpot. I usually do recipes as is the first time through, so I now have meatballs for weeks. Which, since they turned out good, isn't bad.

It came from a crockpot cookbook and I will be making a few modifications next time, not the least of which is to figure how to do it in my baby crockpot rather than the large one.

I will do this one again.
