OOps - sorry Rene! Knew I missed posting after dinner that night on one thread or another! The bean and vegetable stew has been a real hit -- going to make it at least once more before the weather breaks. DH had two bowls the night I originally made it. Hope you like it.

I tried two SUPER simple, AMAZINGLY stupendous recipes. One is a salsa and the other a dip.
The salsa - all you do is mix two cans of corn, two cans of black beans and a jar of salsa together. This is fantastic with crackers, on a whole wheat tortilla, with eggs, and is a big hit at parties!
The dip - Spinach-artichoke dip - which I did NOT think I would like. 2 packages of low fat cream cheese, 2 packages of low-fat cheddar cheese, a package of frozen spinach and a jar of artichoke hearts. Mix it all up (using your hands works best) and heat at 400 degrees for 15 minutes. This is wonderful with veggies!

I've tried several new recipes this week and I have one planned for today. I made a Tofu and Vegetable stir fry that was wonderful and a tofu salad that's like egg salad that's delish! I also made a black bean and sausage soup that was very good and a macaroni and cheese that I never want to see or taste again in this life or any other! Yuck! Today, I'm making a recipe that was a quick fix for my aunt Gwen called Ground Beef and potatoes. I'm using a 98% lean ground beef I found at a market here. The meat is so lean I have to coat the skillet to keep it from sticking! Lea, I'm going to check out that stew recipe. I like beans too and love a good stew or soup!

Today is Healthy Bean and Vegetable Crockpot Stew. I put it up on SparkRecipes last night. Less than 1 gram of fat per serving! We do love our bean soups and stews!

I'm going to try a lentil loaf. I got all the ingredients yesterday and will make it tomorrow. If I like it, it'll be dinner for close to a week. (If I don't, it'll either be cat food or garbage disposal food!)

I found a butterflied boneless leg of lamb in my freezer and another leg of lamb (who knew?) so one is going to be made into Lamb Rogan Josh (Spicy lamb curry) and the other is going to be split into Lamb Stew (which I've never made) and probably a Greek Lamb pasta dish, which I can't remember the name of right now. Each of these will be divide up and put into the freezer. I'm a huge fan of batch cooking, since it gives me a quick nutrious meal

I've had SparkRecipe, Brazilian Black Bean Crock Pot Dish, cooking all day - can't wait to dig in. Hopefully, though it will be the last high-volume thing I make for a while!

Hi Ionna! Your lunch sounds delicious! I'm going to write that down and try it sometime with chicken breasts.
Also, because this is National Cherry Month and I'm co-leader of the All My Children's team, I've created a cookbook featuring green bean and cherry recipes-not mixed together! One of our favorite characters on the soap is named Greenlee and we sometimes refer to her as green bean and since she's leaving the show this month, we have green bean recipes. I think this might be my first post here...so, I love to invent new recipes and try new taste combinations. Today, I put two chicken legs in a ceramic dish, covered them with 1/4 cup sweet red wine mixed with some spicy mustard, balsamic vinegar, 1 tsp. brown sugar and 1 tbs. citric marmalade, salt and red and black pepper. I added 4 sliced carrots and roasted for about 1 hour. I served this with Basmati rice cooked with leeks. I first saute the leeks in 1/2 tbs virgin olive oil, then add 1 cup Basmati, 2 cups water, 1/2 cube chicken Knorr, 1/2 vegetable Knorr cube. I spooned 1 tbs. of liquid on cooked rice when served.
1 chicken leg + 1/2 cup rice + 2 cooked carrots = lunch

I'm planning to make an Oatmeal Spice Bundt Cake tomorrow. I haven't put the ingredients into the recipe calculator but the recipe looks OK nutritionally. My daughter's birthday is Friday and I'm making a Pork Stir Fry with Orange Sauce from a recipe I found in the WW 2008 cookbook. That recipe is posted at Spark.

Tonight I'm making "Nutty Maple Cinnamon Bars" from the latest issue of Clean Eating. I discovered that I was completely out of vanilla and only had a 1/4 tsp or so of cinnamon, grrr. So they aren't as cinnamon-y as they otherwise would be. They're in the oven right now, but the batter tastes great! :-)

I made a recipe for ginger glazed mahi mahi from recipezaar today ... it was really good. Served it with some steamed broccoli and some rice. YUM!
In honor of our teams goal to try one new recipe a week I thought I would make this thread so we can share what recipes we're trying and what we thought of them etc. This week I am trying a cripsy salsa chicken recipe from kraft.com. I love salsa and I love chicken so this recipe should be really good, I will let you guys know how it turns out!
