Does any one have an easy recipe for pulled pork sandwiches that are for 2-4 people or so.I can do the cole slaw on my own if you don't have a recipe for that one, so just the pork (low cal if possible ) .Or on secound thought maybe the cole slaw too..

I agree. Even if it's frozen, if it's there, I'll eat it! Except for muffins. I'm used to freezing those and getting them for breakfast and that's it. Go figure.

Adlins,Thanks for sittings me straight about the deserts , You can freeze them after all. But I don't need them anyway even if they are my favorite part of dinner. lol. So I will freeze with out them ( I really will because I live in chicago and its brutal this year , really cold )

I've heard of using mashed cauliflower in place of mashed potatoes. Let us know what you think. I'm curious.

1. I'm thinking of trying the Hungry Girl version of mashed potatoes, the recipe for which was in an email several days ago. They use cauliflower, along with potatoes and several others ingredients, and they sound yummy and much healthier than regular mashed taters.

2. Since I'm training for a half-marathon, I'm having no trouble getting in at least 500 minutes per month! I've also become addicted to Turbo Jam, and I do that just about every day. I've found that getting at least some of my exercise in in the morning has helped me stay on track. That way, I know that even if my day gets crazy and I can't get in exercise later, I've already done some and it's out of the way.

3. I'll definitely do a blog post about my progress. I've made so much progress, not only with losing weight, but also with my strength, overall fitness level, and also in my acting career. It'll be really motivational to see all of that in black and white and reflect on how far I've come, and realize how much I can do.

Chicagochick - I love freezing desserts! I've never tried freezing pie because I don't really make pie, but I have frozen everything else from muffins to cookies. And, I'd probably try freezing the right cake!

Alas, my freezer is tiny, so there are limits on how much I freeze.

Don't cook Christmas, actually I try to avoid the holiday as much as possible. Not my favor time of year. Count the days till Jan when it is all over.

I do about 500 mins a week so I think I make the exercise goal

I have learned to freeze things now and that is what I plan on doing. I will make alot for dinner and freeze, then I can have christmas dinner in july if I wish. I will not make so much desert because I cannot freeze dessert. But freezing is frugal and I find it saves time as well . I love having the frozen meals on hand and its better for you than the store bought. emoticon

# 1 - We no longer do a traditional Christmas day dinner; not since I developed an aversion to turkey. We now do fried oysters, taters, and tarter sauce. My Mom does the best fried oysters. Not much to modify, but I do use light mayo (Miracle Whip actually) for the tarter sauce, which is my specialty.

Also, I love to bake and will modify recipes to use whole wheat pastry flour and sometimes some butter substitutions depending on the recipe. Also, always skim milk in any recipe.

# 2 - I'm hoping! I found with November that taking the pedometer with me and tracking the out of the ordinary walking, well, I really do get quite a bit in during the day.

Hi Everyone! This month's challenge will be a modification of November's:

Hi everyone. This month's challenge has 3 parts.

1 - Modify one Christmas dinner recipe to be healthier.

2 - at least 500 minutes of exercise this month. With the holidays coming, it's important to remember our exercise goals (without obsessing). I believe exercise makes us feel better in addition to the other benefits, so try and keep to your goals, but modify when necessary. I also think we should *enjoy* the holidays.

3 - Oddly enough it's usually Christmas, the end of the year, when I evaluate where I'm at, not just professionally, but emotionally. Given that we're all here to lose weight,I think sometimes we lose site of some of the other stuff. So, as the year winds down, think about how far you've come on your particular journey, be it the weight loss, getting out of a horrible job or other situation, etc. and consider writing a blog posting.
