Yes, veggie. Yes, seasonal. Look in the produce department, with other fall squashes. They are pale yellow and oval - here's a picture with step-by-step instructions on cooking (it's really easy):

By the way, if you buy one and you're not going to cook it for a few days, do store in the fridge. Unlike pumpkins, they'll get moldy if left out in a warm kitchen. (Found this out the hard way - ugh.)

Let me just sing the praises of spaghetti squash for a moment. I am a carb lover from wayyyy back, but pasta really racks up those calories, so I always feel I have to be very judicious with it. Spaghetti squash? 41 calories for a whole cup of it.

Is it spaghetti? No, of course not. But it has that satisfying carb feeling. The taste is very mild, so with sauces all you notice is the extra carb-y bulk, very much like having, say, vermicelli underneath a sauce. Yeah, it takes an hour to cook in the oven - but you can do that ahead of time and keep a container full of it for several days in the fridge.

Really the texture is almost like shredded potatoes, so I'm wondering if it would make a good substitute for hash browns. Has anyone ever tried this? Hmm, getting all sorts of ideas now.

I don't like cooked spinach or kale. YUCK! But I do like a fresh spinach salad.

My favorite fall veggies are turnips and rutabagas. (I'm still a country girl at heart, I guess.) They are great in stews, but I actually like raw turnip slices too.

Fruits: probably Golden Delicious apples.

I wasn't too fond of cooked spinach either.

Yesterday I followed a recipe from Vegetarian Cooking for Everyone.

Blanch the spinach, drain it, drizzle with dark sesame oil and rice wine vinegar, then sprinkle with sesame seed. I don't have sesame seeds so I went without. It was different than a spinach salad and surprisingly good.

I love sweet potato with a dash of cinnamon and a tablespoon of brown sugar or a dash of pumkin pie spice.
I got a 9 lb cauliflower this weekend at the farmers market for $3. Can you believe that 1.
I love brussell sprouts roasted in the oven with olive oil and parmesan when done baking.
I made a lovely small spaghetti squash last night with fresh tomato sauce.

Life may not be the party we hoped for, but while we are here we might as well dance. Remember Dance like no one is watching!!

Before real yams were around in the US, many people called sweet potatoes yams, as in "candied yams." You still see canned "candied yams" sometimes in the supermarket, but these aren't the African/Latin American vegetable. Most people in the US who aren't from Africa or Latin America haven't eaten actual yams, although they're becoming more available nowadays.

Last night I made a 'slaw" out of celery root that i grated and added in a grated asian pear... the dressing was a simple low fat sour cream, rice wine vinegar, and celery seed and some herbs du provence... Really yummy...

I love a few fruits and veggies. I am not really big on experimenting but I try. I love cauliflower..it is my favorite veggies. And my favorite fruit is bananas. I have to have one a day in the morning, bananas are like others coffee...LOL

I love squash! Last year I tried spaghetti squash for the first time & loved it. I can't wait to buy some again soon. I also love apples. I had been buying peaches, nectarines, & plums because they were "in season" but I bought apples a few days ago & almost forgot how much I love them. I haven't tried sweet potatoes much, other than at Thanksgiving, so maybe I'll give those a try as well.

My favorite on the list are Parsnips, they are great in soups and stews cut up small (like carrots or potatoes) and even better when roasted in the oven with just a little Olive Oil, salt and pepper. *drool*

I try to eat a sweet potato once a week. I just add cinnamon and nutmeg to my potato. I stopped adding butter when I started my Sparkpeople journey. You lose the taste for it, when you add more spices. I love veggies, so I eat a ton of them.

I LOVE sweet potatoes!! I bake 'em, put a little brown sugar on top and crushed pineapples instead of butter. Trust me, it is so good!!!

I'm still learning what to do with some of the squashes, didn't grow up with them. What is the real difference betweeen yams and s. potatoes? I think I've only seen yams in our grocery stores. My daughter and I eat them fairly often. We're almost to the point of back to apples, oranges and bananas...that's kinda the pits, but better than nothing I guess.

I eat tons of veggies. I am so loving the squash season right now.

Yeah, spinach was a surprise for me, as well. I'll eat it in salad and cooked in dishes, but it's still not a stand alone. cooked side dish.

I eat lot's of veggies. Salad for lunch most days,
fruit (smoothies). Just this year I made a decision
to eat sweet potatoes. Never cared for them. I really enjoy them baked with butter and I have done
them as oven fries. My tastes seem to be changing.
I have even been eating spinach (in my salad and some
spinach dip) which I totally disliked a year ago.
I love just about all veggies and fruit.

I've been eating a lot of berries and melons all summer, but now I'm really enjoying the season's fresh apples and plums.

I love sweet potatoes too - usually I just put a little butter on them. They're also good roasted in chunks or as oven "fries."

And yesterday I made my first pot of chili for the fall. I always put plenty of onions, peppers, and tomatoes in, but this time I substituted ground turkey and chopped mushrooms for the ground beef. Turned out great.

Well, I hope everyone did well with Breakfast in September.

With trying to get back into a "food routine" after my recent move, this months challenge is fruits and veggies. At least 2 a day.

I'm not a big fruit and veggie eater and stick mostly with "knowns," but I know there are some fall vegetables and fruits coming into season. What are your favorites?

With Thanksgiving approaching, I'm looking forward to seeing more sweet potatoes (not yams) available. I love them baked with a dab of butter and a hint of brown sugar.
