Now we plan toward Christmas/Hannukah/Kwanzaa/Other -- since it seems that all the world's religions celebrate around the winter solstice, there'll surely be a great deal of celebrating (and one hopes, sharing) in the coming month(s) :-)

Actually, even though I enjoy company of friends and relatives, I don't mind being alone at all, because even when I'm alone, I'm not lonely :-)

And as I think I mentioned, circumstances are not currently appropos for social activites of this sort (didn't I mention something like that, already?)

Maybe one of the all alone people has a big enough home to have a few people in. Worth checking out. I don't like being alone, been alone way to much of my life. I am at least having holiday meals with family.

I forgot to say that we have sometimes had meals at resturants and then go to someones home after for desert.

Beehealthy, you need to check around your area for others that will be spending the day alone. You could start a new tradition by getting all the alone folks together for a meal and conversation.

The cornish hens sound so good.

*sigh* I'm still working on my menu, but largely, that's because I really don't know many people around here, my family is in Canada, and my daughter and her family just moved to California -- so, I'm cookin' for just me. HOWEVER, I think there are plenty of others who're cooking for just one or two, for a variety of reasons.

I've decided on:

Rock Cornish Hens with Rice Stuffing (recipe for 4 servings found at simpleanddelicious.com)

and I'm thinking about these two side dishes:

Stuffed Vidalia Onions (recipe for 4 servings found at eatbetteramerica.com)
Spinach Ambrosia (recipe for 8 servings found at eatbetteramerica.com)

BUT, asparagus is on sale for 1.88/lb and yams for .44/lb. so maybe I'll have a baked yam and some asparagus as my sides and save these other yummy sounding recipes for another time :-)

I'm still considering whether or not to make a dessert or to "just" have a baked apple with cinnamon, brown sugar, and walnuts -- whatty'all think?

I just finished my part of the menu tonite :-) I love green bean supreme, my sister makes that for me every year.. no one does it like her :-) My big part is the ham, I'm going to try an Emeril Lagasse citrus-rum glaze. My sister loves macaroni and cheese, so I'm doing a special recipe for that. Paula Deen's BLT dip is great, so am doing that again. A very good friend of mine fell in love with Emeril's spiced nuts, so am doing that again (didn't want to, but she's asking....lol... ) There is a little appetizer recipe that I want to try.. something new. So... here we go again... tis all worth it.. ehh? Peace, love, happiness and food... what else is there? *giggle* Ohhhh and a lot of time at the gym before, and after. ;-)

I gave my youngest two items to make. Since she is the farthest away she is making the Indian Pudding and the Israli Salad. Oh, my oldest is flying in and her sister is picking her up at the airport the night before Thanksgiving.

My middle daughter lives just down the road from me a couple of miles. She is doing the two potato recipes.

I'll be doing the baking the afternoon and evening before and getting the turkey ready to put in the roaster. I'll make the dressing the night before too so it will be ready for the turkey when I put it on to cook. I like to put as much as I can under the breast skin then bake the rest in a dish.

I think I will give the recipes, and fixens if needed, to my sister for the corn chowder and green bean supreme. That will even it up a lot more for me. Usually the one having the dinner at their house does the meat since it is hard to transport such a big hot dish.

Mimulelady, I have 14 people coming, but I like your menu better than mine, can we come over too? lol Actually I have a lot of help, we are all local so the meal is actually cooked in four different kitchens and a lot of it comes with the guests. My only complaint is that I have to clean my house !! My parts are the ham, dips and mashed potatoes, so am currently on the hunt for some fab. recipes. Gonna hit foodnetwork.com. Last year I made one of Paula Deane's dips, it was her B.L.T. dip and everyone just went crazy and it was sooooooo easy.

Here is the meal I have planned for about a dozen people. Not sure how many will be here, could even be more.

*Turkey w/dressing (I add apples, celery, cranberries and more)
*Ham w/pineapple, brown sugar and a little clove.
*Roasted garlic mashed potatoes
*Gravy from turkey parts
*Sweet Potato/Onion Bake
*Green Been Supreme
*Israli Salad
*Homemade Breads
*Onion Quish, mini for appitizer
*Corn Chowder
*Indian Pudding
*Pumpkin Pie

I have a fresh turkey ordered and the ham is from half a pig we got last year. It's gone but for some ham and ground pork I use to make home made sausage.

I go online and search recipes all the time and put them on my web site. Funny thing is I hardly ever go to my site for recipes, I keep using the search..LOL

ALways wondered why your thanks giving is on a thrusday. Ours (Canadian) is always on the 1st Monday of October.

Here a couple of Canadian versions. Nice fall flavor.

Instead of brown sugar add a tsp of maple surup our sweet potatoe or squash. I also cook the sweet potatoes and squash in the microwave. The add just a touch of maple syrup.

for a waldroff salad (Cabbage, celery, apple or pear, rasions) or Broccoli/ Califlower salad. I make a dressing:

1 part low cal mayo
1 part plain or vanaila yogart
maple syrup to taste ( about 1 or 2 tsp)

LOL anything works for us in moderation;)
My recipe, isn't exactly a recipe exactly. It's more like throw tasty things into your regular stuffing mix.
So you take a box of stuffing mix and add any or all of the following:
1/2 of a sweet onion (I like mine sauteed first)
1 or two stalks of celery, sauteed til slightly soft
1/2 c nuts, pecans or walnuts work really well
1/2 c dried cranberries
1 small apple, diced
Super easy and versatile...you can really use your imagination and add anything you want to stuffing. Of course, the problem with stuffing is having it in moderation!

Yeah, that's a great idea, Laurie. I think that'll be one of my side dishes, fersure!

I think your dressing sounds fabulous but often, kids won't eat anything new, no matter how great it might be (especially if it's something made by their dad's girlfriend -- afraid, they are, I think). Does your dressing recipe work as a spark food? If so, can you point me to it, or post it here? :-)

Thanks for the "Israli Salas" suggestion (which, according to many, many people, isn't really Israli, but at least we all know what we're talking about when we call it that! LOL!).

At someone else's suggestion, I joined the Cooks Illustrated site tonight for a 14 day free trial, and read a litle article explaining about the taste of bell peppers. They say, for sweeter peppers, choose red, yellow, or orange rather than green or purple. Sounds good to me! :-)

I really prefer the green for cooking, anyhow.

One thing I am having my daughter make for dinner is Israli Salad

1 med. cucumber
1 med/lg. bell pepper
3 med. fresh tomatoes

Dressing

3 Tablespoons Olive oil
2 Tablespoons Lemon juice
salt and pepper to suit your taste

You can adjust this to what you might want to have.

Baked sweet potato or yam! You can bake it in the oven or microwave. When it comes out, just add a little butter and a tablespoon of brown sugar and some cinnamon. It's a veggie, but it tastes almost like dessert:D
It looks like it'll be just my bf and me for Thanksgiving. What's frustrating is he insists on Thanksgiving his way...there's very little room for variations. Last year his kids came over and I made rolls and stuffing...the stuffing was amazing... cranberries, nuts, and I think apples...and no one touched it except me. Hmmm...maybe I'll make my own Thanksgiving as well!

Here's one meal I need to plan far enough in advance so I'll have everything on hand by the time the day arrives. I'm cooking for one only so I bought rock cornish game hens (and I found a good looking recipe in SparkRecipes).

Now, it would be pretty cool to have something to eat with that hen! What're you planning? Can you suggest anything that's nutritious and low caloried and can be easily cooked for just one (or two -- I don't mind some leftovers)?

I kinda hate having to plan for just myself, but if I can plan with others, it might be fun after all!

p.s. for non-Americans, U.S. Thanksgiving is the fourth Thursday in November -- November 22 this year.
