2 cans (6.5 oz each) salmon (drained & skin removed- if any) 1 cup mashed cauliflower (and/or potatoes) 1 egg white (or the whole egg) 1 large onion finely diced 1 medium carrot finely shredded (optional) .5 teaspoon paprika
.5 cup of finely crumbled bread crumbs (dried or toasted) optional 1.5 tablespoons garlic oil
1 tablespoon lemon juice 2 tablespoons plain low-fat yogurt (optional) 2 tablespoons prepared mustard (it can have horseradish in it if you like)
Combine salmon, cauliflower/potato, egg, onion, and optional carrot in medium bowl. Mix & stir in paprika. Pat out 8 patties. Set aside.
Mix lemon juice, optional yogurt & mustard in small bowl. Set *drizzle*sauce* aside.
Place shredded bread crumbs on a plate or flat surface to *dust* the patties.
Heat olive oil in heavy skillet over medium heat approximately 1-2 minutes. Add the *dusted* patties & cook about 3 minutes. Flip. Drizzle lemon juice sauce on the cooked side. Continue to cook about another 3 minutes. Serves 4 (2 patties each) at approximately 310 calories.
Note: Can mix the ingredients for the *drizzle*sauce* right into the salmon b4 patting out if you want. Do not have to use bread crumbs for *dusting* or yogurt. Can choose straight horseradish (without mustard) if you want, but you may want to cut the measure in half.

When I make salmon patties I just get a can of salmon,separate out the skin & Juice (dog loves this) The little bones are edible,crush them. I add enough flour & an egg to make patties & just spray a pan with Pam & fry them up. Very basic,simple recipe...I'm sure others can come up with something fancier!
