Dinner at my house is usually quick and crazy (three teenagers & all their activities). Last night's dinner was a hit with all the members of my house and it's quick.
I boiled up a box of our favorite whole grain pasta (penne).
While it was boiling I cut up a portobello mushroom, sprinkled it with sea salt, covered it with plastic wrap and microwaved it for 1.5 minutes. Leave the plastic wrap on and the mushrooms will continue to cook, while the pasta is cooking.
I drained the pasta and added a package of creamed spinach (thawed) and gave it a good stir.
I added the mushrooms. For a bit more flavor you can sprinkle on top shredded 2% italian cheese and a few sprinkles of your favorite hot sauce.
The carnivores at my house also added some cut up rotisserie chicken.
We served it all with a bagged salad. Yummy, satisfying and from start to finish about 15 minutes.
