I made the zucchini pancakes today! I liked them. I added just a touch of olive oil and added sea salt and fresh ground black pepper after they had baked about 20 mins. I had to squeeze liquid from them and baked them a bit longer. Oven was at 350.

Zucchini Pancakes were yummy and simple!
Even my hubby liked them.

1 zucchini
1 sweet potato
1 egg
spices of choice

Grate zucchini and sweet potato. Mix with egg and spices, form into patties and bake at 350 until brown about 30 minutes.

I'm still really liking raw veggies as snacks with hummus or yogurt dip, but I'll need to find other ways to enjoy them too. Maybe Tahini would be good. Another experiment!

Exercise was plenty of shopping today. We had alot to catch up on, but it was great exercise.

I started the week shaking up my exercise with Richard Simmons, and that was fun, I've ended up shaking up my routine instead. I still haven't completely gotten over the sinus infection and bronchitis, still hard to breathe when I exercise, and I've been more tired this week. So I've gone to bed earlier, and slept in a little later. I feel much more rested.

I've also spent less time on the computer all week, which is a goal for this year.

I like this new routine, and think I'll keep it for awhile.

Completed a week of Curves workouts. Have had my salads every day also. emoticon I'm going away on our church's women's retreat for the weekend. I will get lots of hiking in there. Looking forward to some time away.

If it makes you feel any better, the KFC chicken pot pie is really salty. I had it one day, craving that old fashioned taste, but it really didn't hit that spot. I had to come home and make one from scratch that weekend to get over the craving. emoticon

I was all excited to try that new chicken pot pie at KFC, and it was a no go. So hubby got an 8-pc bucket, and I overate. Luckily I don't do that often. I really wanted to try that darn thing. Not sure what we're having for supper tonight.

Yesterday I did that core training workout that game me the delayed onset muscle soreness the only time I tried it. So far, so good. Thought last time it took two days to bother me. If I make it through tomorrow without pain, I'll be psyched!

Exercise was shopping today.

I experimented with another Ninja recipe tonight. It was their simple spaghetti with meatballs, all in one, cooked together. It was excellent. I'm amazed how well pasta turns out. Hubby loved it too!

I'm still going strong on the raw freggies. My fav so far is with hummus and quac, but I'm learning to love raw cabbage, and carrot match stix with many dishes.

Today I took some me-time, which I haven't had in awhile. I enjoyed peace and solitude, while enjoying sunset. It was very relaxing and beautiful!

Veggies: I enjoyed more raw veggies today, and fruit too for snacks. I really am enjoying them, and I'm picking up my servings from 5-9. I'm anxious for spring veggies, and enjoying so much more variety.

Those steak things hubby made last night, at my request, were messy and yummy. Tonight we're going off the diet grid - we're going to KFC to try those new chicken pot pies. They look good - and will hopefully taste good.

Didn't get to that core workout I wanted to try again. Wil do it some time this week. I'm thinking of making a workout schedule so I know every day what workout I'm going to do. Does anyone else do that?

i like your raw veggie snacks.
haven't been able to exercise for a while, so anything is different.
i put together a new recipe today for beef with broccoli. i liked it. posted it to spark recipes. (look at all of them. maybe you'll find something new to try. ....i can't figure ouxt how to find submissions by a particular person :( )
i want to start using Resperate that i haven't used for years.

I did shake it with Richard Simmons Disco Sweat! It was fun to do something different, and 30 min passed quickly. I'll do this one again.

Experiment: I fixed a Shrimp Scampi experiment in the Ninja tonight. It was pretty good, and I like this 1 pot cooking method. The pasta cooked up nicely in the light sauce, but I'll make a few adjustments and try it again a little differently. It calls for pre-cooked shrimp, but there just wasn't any taste to them, and hubby needs much more garlic. But it's a nice base to build on.

Raw veggie snacks: I stuck to raw veggies today with a little humus, and had my cucs in a tiny bit of yogurt/dill/feta dip. Very nice combo. I need to refine a homemade recipe.

Didn't like the baked eggplant. We're going to have steak fahitas (I can't figure out how to spell it - I know it's wrong) with our left over steak from last night with peppers and onions. This is new for us, so hoping it works out OK. The funny thing is that it was my idea. Hubby is the cook, not me, but he was all for trying it. Will post tomorrow to let you know how it worked out - or didn't.

Later today I'm going to try that core workout video that I tried a couple of weeks ago. It gave me some wicked delayed onset muscle soreness. Hopefully it won't this time! I'll keep you posted!

I'm going to get out an exercise game I have for My Wii and do that instead of the DVDs that I usually do. I'm also going to walk at lunch.

Great challenge!

Exercise: I am joining Curves tomorrow. My daughter and I are going to shake things up there.

Food: I'm going to have a salad each day and work on getting all my calories in.

Exercise:
I'm going to shake things up this week, literally, with Richard Simmons. I've ordered some DVD's, and I'll be doing something different, and fun this week. At least 4 times.

Food:
1. I'll try at least 1 new experiment using the Ninja Cooking System, trying an interesting Ninja recipe.

2. I'll focus on raw veggies for snacks this week and see if I can find a way to enjoy them!

I will shake it up this week. Today I used the balance board - which I haven't used since I bought the thing a couple of weeks ago. Tonight I'm having baked eggplant, instead of fried - just hope I like it.

Since I got waaaaay opff track this past week with eating and exercising I am going to focus on getting back on track. I will stay within calories and exercise for at least 10 minutes a day.

Shake-It-Up Challenge:

Let’s shake things up a bit this week.

Are you in a rut with exercise, food, new years goals, or even your daily routine? This week let’s challenge ourselves to shake things up in as many areas as you desire or need. Following are a few ideas, but maybe there are others you can personally identify:

Exercise: Each day try something different, out of the ordinary, or just plain fun. Spice up your routine with dance, or something you never thought you could do. Mix it up, try a new video or Dvd, or even different equipment. Kick it up a notch and increase your reps, laps, steps, minutes, or miles progressively.

Food: Try a new and different food or recipe, cook meals at home for a change, batch cook, change up your healthy snacks, increase freggie's, or learn about what goes in your body by reading labels, or give meal planning and preparation a try.

Your choice: In what area do you need a shake-up? What is your goal? What will you do to make it happen?

Come back daily, share your goals, your plan to shake it up, and how you’re progressing.
