My favorite simple recipe in fall and winter is a hamburger casserole:
1 lb of ground beef (or turkey for a healthy twist) 1 Potato cut in cubes 1 Can of mushrooms 1 Can of green beans or fresh Carrots cut in small pieces 1 Can of Cream Of Mushroom Soup (seasonings optional) This gets enough salt from the soup.
Brown the beef/turkey, mix a little water with the soup, but keep it thick then mix in with meat and all other veggies. Stir together until everything is coated well, pour into a casserole dish, cover and bake at 350 for approx 1 hour. Let set for awhile before eating. I especially enjoy this one better the next day.
This can be simpler if you just like using frozen mixed veggies, or you can add anything else that appeals to you.
