I tried the low GI diet last year. I bought two books "Living the GI Diet" and "The GI Cookbook". I kept with it for about two months, but it just wasn't for me. It was too different from my habits that it was becoming a chore to keep going.
So now I just make sure I have more veggies on my plate than anything else.
Not sure if that helps you, but I would suggest getting a book on the subject. It will have alot of tips and pointes in it as well as some recipies for you to try out.

I was thinking about following a low GI eating plan before I decided to stick with the low carb plan that worked for me 2 years ago.

does ANYONE know anything about Eating Low GI? i have been Counting Calories BUT i am also going to start watching my Glycemic Index too! if anyone else eats this way could you give me some Advice and Pointers... this is My Year and im doing All I Can To Get The Healthiest Ive EVER Been Before ANY info will be Truly Appreciated...
