I made 2 things this weekend, the Popeye casserole, which is a crockpot dish with cottage cheese and spinach, and a zucchini rice bake from an old Cooking Light magazine (I have a binder full of recipes I pulled out of years of Cooking Light magazines I had lying around that I wanted to try out...better get to it!)

I have been doing very plain cooking. Time for me to think about trying a new recipe, or maybe re-doing some I did back a while ago. That whole grain pasta chicken casserole was really good. Should definitely do that one again. We had Rock Cornish Game Hens with wild rice last week. It had been more than a year since I'd fixed those and they were a hit.

I'm checking every day for round 10!

My favorite girl scout cookie used to be Samoas. I've discovered they are made with GMO products, so I refuse to purchase them now. Plus, I want a healthier version. My daughter found me a raw vegan recipe, which I tried! Oh my, they are delicious! However, still a little too high in calories & fats, so I am going to tweak the recipe a bit and try it again with less coconut oil...

We don't have a new round going yet, do we? I need to batch-cook tomorrow, & I've had a yen for that magical lime-cilantro-ginger combo, so I googled those three + chickpeas & found this--based on a Burmese dish, which is a new cuisine for me!

I've been looking for a Larabar type recipe (I bought dates last week) and up popped Coach Nicoles coconut bites, so I made those. Easy recipe, I had to sub walnuts and sunflower seeds for the almonds (since that's what I had in the cupboard) and they turned out fine. A bit sticky to make the balls, and the amount of coconut she used was too much for mine, I only ended up with 1/4 cup of coconut.

Sauteed garlic and onion in oliver oil and soy sauce. Then cook some brown rice. Pour the garlic and onion in a wok pan or frying pan with the brown rice and a little more oliver oil at the bottom of the pan. Pour a little more soy ssuce over the rice and garlic and onion and cook for four minutes and serve. Really good.

I'll post my Indonesian Chicken Wrap review later today--I made them earlier in the week, but haven't had time to write up my review.

I also came across a really intriguing recipe for pizza made with a cauliflower crust. I was a bit skeptical, but it's baking in the oven now and smells fantastic. It's also enormous and with the topping I've got planned will clock in at well under 500 calories for THE WHOLE THING! Here's a link the recipe I'm using:

I finally found a recipe for a different take on coleslaw, and without coleslaw dressing. I've been looking for a coleslaw with a good vinaigrette, and this one is perfect, simple, versatile, and quick to fix. DH is loving that he can add whatever extras he chooses.

Fresh Cabbage Salad

1/4 cup white wine vinegar
1/2 cup olive oil
1 tsp Dijon mustard
1 tsp sugar
1 tsp kosher salt
Pepper to taste
1 cup green cabbage, finely shredded
1 cup red cabbage, finely shredded
1/2 cup carrots, julienned
1/2 cup red and green peppers, julienned
1/2 cup red onion, finely slivered
1 small bunch chives, cut into 2-inch lengths
Toasted slivered almonds to taste.

1. In a bowl, whisk together vinegar, oil, Dijon mustard, sugar, salt, and pepper. Set aside.

2. In another bowl, toss the cabbage, carrots, red/green peppers, onions, and chives together.

3. Drizzle the salad with the vinaigrette and toss to coat. Top with almonds. Makes 4-6 servings.

I added cucumbers and extra match stix carrots to ours. This would also be good with the broccoli slaw mix.

I try to cook something new on the weekends to freeze for lunches, so I'll have to give this one some thought, will post my recipe later, once I've found it!

I think it's hilarious that a serving supplies 16 grams of fiber! Not sure I've ever eaten anything so fibrous, even though legumes are a staple in my diet. It looks absolutely scrumptious in any case. emoticon

I really want to make this baked round steak. Dredging, browning in a skillet, and then baking in the oven for 40 minutes sounds a little lengthy for a weeknight dinner. Think I'll make it Sunday night.

Scallion Cilantro Rice with Habaneros and Lime
Gina's Weight Watcher Recipes
Servings: 4 • Size: 3/4 cup • Calories: 192 • Old Points: 4 pts • Points+: 5 pts
1 cup uncooked long grain rice
1 tbsp olive oil
1 habanero pepper, diced
1/2 tsp salt
2 cups water
2 scallions, diced
1/4 cup fresh chopped cilantro
2 tbsp fresh lime juice
In a small heavy pot add oil and saute pepper on medium heat. Add rice, water and salt. Boil on high until most of the water evaporates. When the water just skims the top of the rice, reduce flame to low and cover about 15 minutes. Shut off stove and keep covered an additional 5 minute.

In a medium bowl, combine chopped scallions, cilantro, lime juice, rice and toss until completely mixed. Makes approx 3 cups.

1 lb large shrimp, peeled and deveined (weight after you peel them)
6 cloves garlic, sliced thin
1 tbsp Spanish olive oil
crushed red pepper flakes
pinch paprika
salt
1/4 cup chopped fresh herbs like cilantro or parsley
Lime wedges for serving
In a large skillet, heat oil on medium heat and add the garlic and red pepper flakes. Sauté until golden, about 2 minutes being careful not to burn. Add shrimp and season with salt and paprika. Cook 2-3 minutes until shrimp is cooked through. Do not overcook or it will become tough and chewy. Add chopped fresh herbs and divide equally in 3 plates.

Enjoy the journey.. it is a ride worth taking!

I like that the recipe is written to use 1.25 lbs of turkey. Costco sells their ground turkey in 1.25lb packages so it's annoying when recipes call for only 1lb instead of 1.25.

Meatballs are one of my favorite foods because they have easy built in portion control, and they usually freeze well. These days since I cook for one on weekdays, freezing a portion or two of a 4 serving meal works out so I don't have to eat the same meal 3 days in a row. I do plan on making this as 3 servings instead of 4 so it's more substantial, and will have one serving for dinner, and the other for lunch the next day, and will freeze the third to have another time. I calculated the calories at 393 for the 4 meatball serving. I'll serve with a half cup of brown rice, and snow peas mixed in with the rice. I'll drizzle the dipping sauce over all of it :) Total meal calories will be 514.

Working on maintaining at 140!

i think this is a great idea, can't wait to get involved. below is my recipe that i modified to make it healthier.

Pretzel torte
crust
2 cups crushed pretzels
1/2 cup butter (melted)
2 tbsp splenda or similar substitute
combine pretzels , splenda, and melted butter and pat into 13 x 9 cake pan bake at 350 for 10mins. Cool
center filling
8oz low fat or 1/3 less fat cream cheese
1/4 cup splenda
8oz fat free sugar free cool whip
beat cream cheese and splenda together till smooth,then beat in cool whip till fluffy, pour over pretzel crust and cool

topping
6 oz sugar free jello in same flavor as frozen fruit
12-16oz frozen fruit like strawberries, blueberries, blackberries, or a mixture
2 tbsp quick cook tapioca pudding(optional but makes topping thicker)
2cups water

in medium sauce pan bring water and tapioca pudding to a boil, add jello and cook 1 min. Stir in frozen fruit and stir well. Cool about 10mins and pour over cream cheese mixture.
Refrigerate for about 2 hrs prior to serving.

According to this you get about 24 pieces and each one is @167 calories.

On your sparkpeople blog, review your recipe. Include a link to your recipe for folks who aren't playing the game. Post the picture if you took one. Describe any changes you made or would make if you made it again. Was it a hit with the kids? Would the leftovers make a great lunch? Maybe it was a flop and you ended up throwing it all out. You get the gist. Come back to this thread and post a link to your blog so we all can "Ooooh and Aaaah" over your recipe! If the website that you got the recipe from has reviews, comment there so that even more folks can benefit from your awesomeness. Read other people's reviews and comment on their blogs. You never know, you might stumble across your new favorite recipe!
