The pistachio frozen yogurt was okay. It needs improvement. Was a bit bitter for my tastes. I tried it the next day with peppermint extract, honey and dark chocolate chips. Too much pepperment! I will perfect this. Thinking of trying it with no sugar added chocolate instant pudding next time or unsweetened cocoa powder with peppermint extract and dark chocolate chips.

This turned out fab! My best quinoa concoction yet! Shrimp, quinoa, mushrooms, onions, bell pepper, raisins, mango, fresh lime juice, ground ginger (not incl. in recipe) and a garlic clove:

The yogurt cheesecake souffles actually turned out despite my husband using up all the whole eggs yesterday. I had to just use egg whites. But they're yummy, packed full of protein and low in carbs. I put some of my pumpkin and PB "mousse" on top. Next time I'm going to try them with chocolate, peanut butter cream cheese spread, I may have to melt it a bit:

So the Butternut Squash, Apples and Coconut Salad was nice. Nothing too fancy. I definitely liked the Apples with coconut and honey, who wouldn't?

I bought some butternut squash this week to make butternut squash and black bean burritos (they're great!) but have tons left over so I'm going to try out a few new recipes with it. I've made butternut squash mac and cheese (it was ok). So I'm going to make a Butternut Squash, Apple, Coconut salad tomorrow:

Made the Garbanzo-Bean Flour Pancakes this morning. Definitely a keeper of a recipe! Without toppings, 235 calories per serving (3 pancakes). With the Earth Balance & Maple Syrup, my breakfast topped out at 367 calories, completely within reason.

Also provided a substantial protein & fiber serving. :D

It sounds far more sinful than it is but tasted absolutely devilish. ;)

Oh wow, the peanut butter baked in chunks and it tasted just like a Reese's PB cup. It was to die for. It was more like a dessert than a breakfast. If it's still too sinful for your tastes cut the amount of sweetener in the recipe. Bananas alone would make it sweet enough and you don't need the frosting. It's that good without it.

I used maple syrup to sweeten. It actually could have done with a bit less, especially in the frosting (it was very sweet!). I ended up using unsweetened applesauce instead of mashed banana because my husband decided to take my last banana to work (and of course, bring it home the next day uneaten.)

The best thing about it is that it's baked oatmeal, so even though you'd love seconds... you're so satisfied from just 1 serving. Kept me full all morning.

Including the frosting mine was 267 cals, 13g fat (healthy fats from natural peanut butter and I used unsweetened vanilla almond milk), 35g carbs, 9g protein.

@Amanda: I've made that Apricot Pork Chop recipe lots of times (I think it's originally from Cooking Light) and it's simple and delicious! I like serving it over a bit of rice because it makes a nice sauce.

I love Mexican Chicken MolÚ, so I'm going to give this recipe a shot:

MolÚs can be really time consuming to make, but are so delicious when done right. This recipe seems to strike the right balance between simplifying things a bit and not sacrificing taste.

Yay! This is always fun. I think I'll try this recipe for chicken korma, except I'll make it vegan by subbing chickpeas for the chicken because this weekend I'll be with my vegan son, DIL & granddaughter.

A little reading tells me that korma is characteristically a creamy style of curry, with yogurt added at a low heat to prevent curdling. But there are variations on the dish, so I guess it's still OK to call it korma without yogurt.

Everyone is welcome to participate (or lurk!) and it's not necessary to take part every round. Join in when you can and sit it out when you can't!

Step 1 - Pick and post a recipe! (post by Monday 4/29 )
This can be a recipe from an online source, a cook book, or a magazine. Post the link here or if you are reproducing it from a paper source, do that here. The general idea is to try something new. This round can be any recipe you like. In other rounds we may do categories (beef, soup, dessert, etc.) Here are some great websites to browse...

My favorite step by far! This step will also include some prep work for your review. Ask your family (if applicable) what they thought of the recipe. Note any changes that you made or would make if you were to prepare the recipe again. Maybe even snap a pic of your delicious dish.

Step 3 - Review! (post by Monday 5/6)
On your sparkpeople blog, review your recipe. Include a link to your recipe for folks who aren't playing the game. Post the picture if you took one. Describe any changes you made or would make if you made it again. Was it a hit with the kids? Would the leftovers make a great lunch? Maybe it was a flop and you ended up throwing it all out. You get the gist. Come back to this thread and post a link to your blog so we all can "Ooooh and Aaaah" over your recipe! If the website that you got the recipe from has reviews, comment there so that even more folks can benefit from your awesomeness. Read other people's reviews and comment on their blogs. You never know, you might stumble across your new favorite recipe!

No suggestion this round. Make whatever you like!
I realize that one round every two weeks is a little slow for some of us, but a round every week would be a little quick and could become burdensome. If you are on a roll and want to do multiple recipes/blogs, have at it!!
