Skirnir, why don't you go ahead and share your review of your round 3 recipe? We'd benefit and hopefully you will, too!

I made fish the other night. I looked up recipes and read the suggested recipes on the bag and kind of combined them. Turned out okay, but I suspect I should do something else for this challenge. We'll see.

I'm back! Since I lurked on Round 3, I've chosen two recipes to try this week. While looking around skinnytaste.com, which has become my new favorite site for recipes, I found this nice recipe for zucchini lasagna:

I'd also like to thank RUTHXG for the seafood selector link. It's really informative and very useful. Anyone who eats fish regularly should check it out. Unfortunately, it has no information on fish from the Mediterranean. I really wish there was something similar for it.

Oh shoot, I just made fish on Saturday... and it's not something I make often at all (like hardly ever, this was only the 2nd time I've made it in the past year) because the price for the kinds of fish I like (ie not salmon or shrimp, and I'll only buy wild-caught) is usually way out of what I can afford on any sort of regular basis. This was the recipe I made though, mahi mahi was on a great sale for 6.99/lb (half of what it usually is). cookingwithmichele.com/2011/04/herb-

. It was very delicious and very easy to put together. A 6oz piece (my filet was a pound!) w/ the paste was 425 calories. Fat was a little high at 26 but that's due to the olive oil and walnuts, so at least it's good fats.

I will say, the stores do seem to be having a lot of fish/seafood sales, probably due to lent. If I end up finding another good fish on sale I might make a fish dish on Friday or Saturday when my SO is home. But....

I came here to share this recipe for chicken that I plan on making next week. The recipe is for 8 lettuce wraps, but I'm just going to make the filling to make 4 rice bowls, sort of like what you can get at Chipotle. I'll do cilantro lime rice. I like to fix catfish--haven't done so in a while, though, so this is a good prod to try out a new recipe. I'm going for Cajun Baked Catfish because it looks both easy & yummy.

By the way, the Environmental Defense Fund puts out a really helpful "seafood selector" that you can print out, trim & carry in your wallet to remind yourself which kinds of fish/seafood are more sustainable--both for fish populations & for human health. There's also an app if that's preferable for you.

ROUND SUGGESTION - FISH! The suggestion is just that. Not mandatory. I heard on SparkPeople radio recently that we should be eating fish twice a week. I know that we rarely eat fish as I need more go-to recipes!

Everyone is welcome to participate (or lurk!) and it's not necessary to take part every round. Join in when you can and sit it out when you can't!

I realize that one round every two weeks is a little slow for some of us, but a round every week would be a little quick and could become burdensome. If you are on a roll and want to do multiple recipes/blogs, have at it!!

Step 1 - Pick and post a recipe! (post by Monday 3/3 )
This can be a recipe from an online source, a cook book, or a magazine. Post the link here or if you are reproducing it from a paper source, do that here. The general idea is to try something new. This round can be any recipe you like. In other rounds we may do categories (beef, soup, dessert, etc.) Here are some great websites to browse...

Step 3 - Review! (post by Monday 3/10)
On your sparkpeople blog, review your recipe. Include a link to your recipe for folks who aren't playing the game. Post the picture if you took one. Describe any changes you made or would make if you made it again. Was it a hit with the kids? Would the leftovers make a great lunch? Maybe it was a flop and you ended up throwing it all out. You get the gist. Come back to this thread and post a link to your blog so we all can "Ooooh and Aaaah" over your recipe! If the website that you got the recipe from has reviews, comment there so that even more folks can benefit from your awesomeness. Read other people's reviews and comment on their blogs. You never know, you might stumble across your new favorite recipe!
