I made the Chef Meg's healthy chicken casserole recipe last eve and it was delicious. I'll blog about it tomorrow (with the link to SparkRecipes) and download my picture. I do want some help, though, to think about what I could use other than zucchini so my husband would like it. He liked it all but the zucchini. I suggested he pick it out, but he doesn't like to do that. My daughter and son in law liked it as it was. Kids weren't crazy about it. I liked it a lot; it is good to have some recipes to fuss with. But for every day I'd rather eat the major parts of the casserole separately (chicken breast, broccoli, zucchini, bell pepper, whole wheat pasta) -- it would be less work and I could skip the butter and flour and the cheese and not miss them.

When's the deadline for round 3? I haven't gotten my chicken casserole made yet. My hubby keeps bringing home other things that need to be cooked and eaten; I'm getting the feeling he isn't too keen on me trying another new recipe. Had to freeze the chicken. Oh, well.

I made this tonight. I didn't care for it. My brother didn't either. My mom LOVED it.

chicken broth i/o veggie broth;
2 red peppers i/o 1 red 1 yellow;
regular Worcestershire sauce, not vegan

Greetings from my son's house in St. Louis! He & his wife are vegan, & he loves the sound of the SP recipe for Vegan Thai Green Coconut Curry with Tofu and Veggies, so we're going to make it tonight:

We briefly deliberated making our own green chili paste for the purpose, but it would require assembling extra ingredients. We'll still go to the international grocery to get a few of the ingredients, but hopefully we'll find packaged chili paste to expedite things. I'll post a review soon!

I think it's pretty awesome that my son grew up to be the main cook in his household.

I think it could be fun as long as it's optional, since I don't have a slow cooker, and do very little in the way of soups and vegetarian meals (they just don't go over that well in my house :)). Although vegetarian might be a good challenge for me.

I'm going to make a chicken casserole, but not sure which one yet. Probably one with bell peppers.

However, I'd probably have to substitute something for the zucchini as my hubby won't eat it and the other 5 I cook for are not fans either, even though I love it!! Everyone likes green beans. Hmmmm. We'll see.

Okay, I scanned the recipe but Spark won't let me copy and paste.

It's Curried Noodles and Shrimp. I need to scan all 300+ recipes from that set of binders. Time Life sold them 1992-1994 and they are no longer available anywhere. There are some partial cards on eBay, but I have the full set which I use all the time.

The calories currently add up to 510 per serving (I only used 1 tbsp of olive oil as I've found 2 tbsp is not necessary). It will probably go down once I know my exact chicken sizes, right now I have it at 13oz for the 2 servings.

I plan on serving w/ a spinach salad, only I'll make a homemade vinaigrette of some kind and do the salad on the side.

Everyone is welcome to participate (or lurk!) and it's not necessary to take part every round. Join in when you can and sit it out when you can't!

I realize that one round every two weeks is a little slow for some of us, but a round every week would be a little quick and could become burdensome. If you are on a roll and want to do multiple recipes/blogs, have at it!!

Step 1 - Pick and post a recipe! (post by Monday 2/18 )
This can be a recipe from an online source, a cook book, or a magazine. Post the link here or if you are reproducing it from a paper source, do that here. The general idea is to try something new. This round can be any recipe you like. In other rounds we may do categories (beef, soup, dessert, etc.) Here are some great websites to browse...

Step 2 - Make recipe and EAT!! emoticon
My favorite step by far! This step will also include some prep work for your review. Ask your family (if applicable) what they thought of the recipe. Note any changes that you made or would make if you were to prepare the recipe again. Maybe even snap a pic of your delicious dish.

Step 3 - Review! (post by Monday 2/25)
On your sparkpeople blog, review your recipe. Include a link to your recipe for folks who aren't playing the game. Post the picture if you took one. Describe any changes you made or would make if you made it again. Was it a hit with the kids? Would the leftovers make a great lunch? Maybe it was a flop and you ended up throwing it all out.
