Made the peanut stew tonight and it was good, but then I typed in the calories. Nearly had a heart attack. I knew it wasn't diet food with all that peanut butter, but ugggh!!!

YOJULEZ, I needed to cook today so I made the halal cart chicken you linked to (except I used a turkey breast)--& it's AMAZING! Yum, yum, yum. I won't post a review because I don't want to steal your thunder. Thank you SO MUCH for linking to it.

I adapted the white sauce, using all Greek yogurt, no mayo. And I already had some cooked bulgur, so I toasted some of that with cumin, turmeric, salt, pepper, & chicken drippings . . . wonderful.

Yeah I don't even know if SO will eat it! But I think I'll really like it so too bad for him, he can make a sandwich LOL. I used to order lebanese food a lot when I lived in Chicago and it's so good. Middle Eastern food is actually really healthy for the most part as they use lots of spices etc for flavor instead of oils, cheeses, etc.

Did try a new recipe this past week. Tried Apple Eggnog bread and was absolutely delicious and with only a 1/2 cup of light eggnog and splenda as the sweetener wasn't too bad for me. Probably will make more this week, as that eggnog needs to go before it really does go. (Bad that is!)

I made my recipe and was very happy with how it turned out. It was delicious! It took a little bit of effort, especially with the home made pie crust and roasted veggies but I really enjoyed it and have been enjoying the leftovers as well.

I flaked in the first round, but I did try at least one new recipe recently! I had never cooked spaghetti squash before. It was a bit time consuming--my squash was big & the prep involved several steps plus an hour-plus of oven roasting. But I liked it a LOT! I served it as a base for marinara sauce souped up with tofu, sweet peppers, & extra oregano & thyme. It has a different texture from pasta, obviously, but I found it mouth-satisfying. And I LOVED recording it in the nutrition tracker & seeing just 40 calories for a whole cup!

I just tried Bobby Fly's Ginger-Soy-Lime Marinated shrimp recipe.

It was simply wonderful. He said not to peel the shrimp, while some reviewers peeled the shrimp. I did both and found Bobby was correct. The unpeeled shrimp were more moist.

We also improvised and heated the leftover marinade to a boil. It made a wonderful dipping sauce for the shrimp.

I am going to experiment using the sauce on fish and tofu as a marinade. It has a lovely lime ginger soy flavor. Make sure you use fresh ginger.

I had a hard time picking for next week, since I have 2 good meals I'm making. One is an orange and mustard chicken, but in the end I decided to do this Bacon and Pea Mac & Cheese for the challenge. I will be cooking it next Tuesday www.jasonandshawnda.com/foodiebride/

It sounds like it would not be healthy, but I built it out, and it's 510 calories, 32 grams of protein, and 9 grams of fiber per serving (makes 4 servings), so it sounds pretty good to me. The fat is high at 19 grams but I am not a low-fat eater so it doesn't bother me.

To save on calories and increase the health-factor, I use center-cut bacon, which is only 50 calories for 2 slices, and much lower in fat than regular bacon, and I will use whole-grain pasta (might use penne, might use rotini, can't remember what's in my pantry from here at work). It calls for 8oz of frozen peas but frozen peas usually come in 10oz boxes, so I will use the whole box, and I will use 2% greek yogurt. Depending on how the rest of my week next week shapes up calorie wise (I track a week ahead), I might also add in some chicken sausages. We'll see.

Plus, it looks like my SO will not be home again next week, and he doesn't like peas, and I do :) If he does end up being home I will sub in broccoli instead.

Working on maintaining at 140!

Round steak often goes on sale at my grocery store. I will stock up on it, but really only have a couple "go to" recipes for it. I think my family will eat this without any fuss.

On your sparkpeople blog, review your recipe. Include a link to your recipe for folks who aren't playing the game. Post the picture if you took one. Describe any changes you made or would make if you made it again. Was it a hit with the kids? Would the leftovers make a great lunch? Maybe it was a flop and you ended up throwing it all out. You get the gist. Come back to this thread and post a link to your blog so we all can "Ooooh and Aaaah" over your recipe! If the website that you got the recipe from has reviews, comment there so that even more folks can benefit from your awesomeness. Read other people's reviews and comment on their blogs. You never know, you might stumble across your new favorite recipe!
