thanks for the tips. I've been reading up since and also managed to get of the meds :) Yes, at the moment I'm managing my diabetes through food and I hope I can keep it up.
If I could do that within 5 months, anyone here can too.
I completely understand where you're coming from with gradually changing. I'm not complete vegetarian or vegan (chocolate & cheese are my downfall) and eat meat when invited and there is no other option (rare though).
For breakfast I discovered chia pudding. I make it with a twist: 1 tblsp hemp hearts, 1 tblsp flax seed, 1 tblsp whole phsyllium husks, 5 tblsp chia seeds, 1 tsp camu camu powder and either a little bit of fruit or algave syrup. All mixed with 1 cup of almond or coconut beverage, refrigerated over night and next day I'm full until lunchtime. I want to try making yoghurt from coconut milk and use that instead of milk alternative.
Digestive enzymes and probiotics help a lot I find with digesting and being more alert.
Maybe we can get this thread going and inspire others ;)

I'm trying to make a change to become vegetarian and eventually vegan. My problem at the moment is getting enough protein and not using beans, TVP or tofu every day. Fat is under my goal too. I'd be grateful for any suggestions & tips.
