Heather knows this one, but I make pizzas with whole wheat fajita sized tortillas. I use a little tomato sauce (low-sodium), spinach, sun dried tomatoes, onions, mushrooms, either sliced chicken or ground turkey (and even the occasional turkey pepperoni) and a mix of part-skim mozzarella and shredded parmesan cheese.
I get all the flavors I love on a pizza without all the fat and calories of a Pizza Hut or Dominoes pizza. Works great if you like a crispy crust.
