You take a cup of cooked grated cauliflower (I grate or finally chop it first (about a cup and a fourth) and then I steam it in the microwave, covered for 2 minutes. Then from that I measure out a cup.
Then you put in 1/4 cup mozz. cheese (lowest fat you can find), and 4 Tbl of baking mix (Bisquick, Jiffy Mix), and an egg white that is well beaten.
Season the mixture with as much oregano, onion powder and if you wish crushed dry red peppers as you desire. Dough should be a little sticky and loose, but not batter like. Add a touch more baking mix if you need to,
Place on a stick free pan lightly coated with cooking spray. Spread it out in either a rectangle or circle. It will not cover an entire pizza pan or cookie sheet. Make it whatever thickness you want.
Bake in a preheated oven at 450 degrees F. for 8 minutes or until you see the bottom edges browning up.
Remove from oven and turn the heat of oven off.
top the pizza anyway you want. Many times I don't add any more cheese because of what is in the crust, other times I'll put a sparse coating of mozz. and parm cheese over the sauce and veggie toppings.
Put pizza back in oven with the heat off and allow the remaining heat to warm up any toppings, and if applicable melt cheese. Takes only a few minutes.
Use a spatula to loosen the edges of the pizza. Cut into slices or square pieces, or serve the entire thing on a plate and eat. Pizza can be easily picked up by hand.
Filling and satisfying. I ate this twice this week and still lost several pounds. Really cuts down on the carbs.
