Yes microwave times are different. You can always add a little extra butter. I eat one almost every morning.

Thanks, Nancy. I tried the muffin recipe this morning--I think 40 seconds in my microwave is too long, as it was pretty dry. I liked being able to get one serving made so quickly, though.

2 cups flax seed meal (Seeds keep longer so I grind my own)
1 tbsp. baking powder
1 tsp. salt
1/2 cup water
1/3 cup oil
2 tbsp. sweetening power ( I use liquid sucrulous no carbs)
5 eggs beaten

Using a whisk blend the dry ingredients well. Using same whisk to beat the wet ingredients well. Mix wet and dry and let set for a couple minutes to thicken. But not too long or unable to spread. Pour on a prepared 13 x 11 baking pan with sides. Bake 20 mins. at 350. At 12 slices it has .8 net carbs and 5 grams fiber
I add 1 tbsp. of cinnamon and more sweetener ( to taste) and sprinkle top with chopped pecans for a wonderful breakfast bread.
Today I added 1 tbsp. cinnamon, 1/2 tbsp. of cardimon, 1/4 tsp each nutmeg, ginger, and cloves for a gingerbread flavored bread. Topped with the pecans. When it came out of the oven I cut it using my spatula and topped my piece with softened cream cheese. Dang it was good. And very filling. I doubt you would be able to eat more than 2 pieces. I surely can't. BTW I get my flax seeds at the heath food store.


This is also a low carb recipe but very high in fiber.

Nancy, do you have any other recipes with higher fiber content? I always have trouble getting enough, even when I'm really paying attention. I'm going to give this a try as I do get tired of the Fiber One cereal, which is the only thing that seems to boost my fiber intake. Thanks. Jeannie

I copied this from another thread... It is a low carb recipe that tastes like a bran muffin. Good for anyone having trouble getting enough fiber in their diet.

Muffins in a minute

1 egg
1 tsp olive oil or butter
1 tsp cinnimon
1/2 tsp baking powder
1 spenda packet (I used 1 in it and one on top of it with some extra butter--for moistness)
1/4 c flax seed meal

1. Wisk oil and egg
2. Stir dry ingredients together
3. Mix wet with dry, mix well.
4. Spray mug/small bowl with nonstick spray.
5. Microwave until done (receipe said 1 minute) mine is done in 40 seconds. Don't overcook--not pretty when this happens...underdone isn't good either.
6. I figured out the muffin comes out of the bowl(and actually looks like a bran muffin) by I like to eat it out of my cup.


199 calories
14g FAT
2 g Sat Fat
11 g carb
9g fiber
12g PROt
(So only 2 net grams of carb.)
