I make a baked oatmeal with peaches and blueberries which is wonderful. It makes an 11 x7" pan, so I have it for the week. My daughter said she even freezes hers. You can mix the fruit up and since I don't like milk, I top it with low fat vanilla yogurt. It's great because my weeks breakfast are ready to go, just reheat in microwave. Recipe is from Taste of Home Healthy Cooking.

Have you tried baking oatmeal instead? It doesn't have that same sloppy consistency and comes out more like a muffin or bread.

I mix uncooked oatmeal into yogurt. Say, 1 ounce (1/4 cup or a bit more) into my 3/4 cup bowl of yogurt. Add a diced-up or grated apple and maybe some raisins, a bit of sugar if the yogurt is too tart for your tastes. Stir it up, let it sit for awhile. It is like a creamy-delicious yogurt pudding, not all all the texture you get when cooking it up as a cereal.

It is my fave breakfast tbh. I will add other fruits in addition to/in place of the apple, and sometimes add pumpkin seeds, sunflower seeds, nuts, sweet spices (cinnamon, nutmeg), whatever happens to be in season/in the house.

Goal 1 - break 200 (46 pounds lost)**DONE**
Goal 2 - leave obesity behind (BMI 29.9, at 185#) **DONE**
Goal 3 - BMI = Normal (154# or less)

Oatmeal instead of bread or crumbs is good to put in meatloaf mix. I like oatmeal for breakfast with brown sugar, a little butter and blueberries.

Whenever I make any type of bread, I add in 1/3 to 1/2 cup of regular or steel cut oatmeal to the dry ingrediants. Really helps the texture and flavor of the breads.

If you don't like regular oatmeal, check out steel-cut (Irish) oatmeal. It's got a grainy texture and you actually have to chew it. It's delicious, hearty and very satisfying.

I just found a recipe for a banana oatmeal smoothie that includes 1/2 cup of cooked oatmeal. I would definitely cut it in half.

2 whole Chiquita Bananas (best with brown flecks on peel)
2 cups Ice
1/3 cup Yogurt - preferably Greek yogurt flavored with honey
1/2 cup Cooked oatmeal
1/3 cup Almonds

I usually cut a banana into my oatmeal and sprinkle chopped walnuts on top, ym yum !!!

And don't forget the cookie recipe that's usually on the box of oatmeal. I just use less sugar and half whole wheat flour for the white flour. emoticon

I make a wonderful baked blueberry & peach oatmeal that makes enough for the week. I reheat it in the microwave and serve with vanilla yogurt. Recipe is from Taste of Home Healthy Cooking.
I also make peanut butter chocolate chip granola bars from Taste of Home that are good for you. I don't care for peanut butter but I do like these granola bars. Taste of Home has many good recipes and can be adapted to earthier eating as well as from their Healthy Cooking magazine.

I know how good oatmeal is for me, but I absolutely cannot choke down regular cooked oatmeal --- the consistency reminds me of mucous. :-p

Granola with an oatmeal base is fine (being crunchy, not porridge-y --- especially like to sprinkle a bit on yogurt), and I already put oatmeal in things like meatloaf & turkey burgers (and, of course, cookies & bread!). I'm wondering if anyone has other favorite ways to sneak this nutritious, economical item into meals. What dishes am I overlooking?

Thanks for any ideas.
