Had an idea...
If the soup is too sweet with the carrots you can add some sauteed peppers, onions and garlic before adding to the soup.
Also, I add pimento stuffed green olives along with a little of the brine to my soup.
I have never put carrots in my black put in other beans, Do not know why they would not be good

Black bean soup can be as unique to you as you like.
Carrots and poblano peppers sound like great additions.
Go for it.

I'm planning to do black bean soup in the crock pot. The beans, ham and onions are a given. I'm thinking to put some poblano peppers in it as well, but what I'm debating is that I have some Nantes carrots as well. I'm wondering how the sweet carrots will blend with the other flavors? Or am I better advised to reserve them for another dish?
