If the soup is too sweet with the carrots you can add some sauteed peppers, onions and garlic before adding to the soup. Also, I add pimento stuffed green olives along with a little of the brine to my soup.

I'm planning to do black bean soup in the crock pot. The beans, ham and onions are a given. I'm thinking to put some poblano peppers in it as well, but what I'm debating is that I have some Nantes carrots as well. I'm wondering how the sweet carrots will blend with the other flavors? Or am I better advised to reserve them for another dish?
