I'm definitely going to try this. I already make my meatballs healthier by adding minced spinach (I buy the chopped frozen, defrost, squeeze a bit drier, and cut up with my kitchen scissors). It looks like parsley when it's chopped up fine and no one even notices it :D And I get to eat what I don't use in the meatballs, win/win.
