I'm definitely going to try this. I already make my meatballs healthier by adding minced spinach (I buy the chopped frozen, defrost, squeeze a bit drier, and cut up with my kitchen scissors). It looks like parsley when it's chopped up fine and no one even notices it :D And I get to eat what I don't use in the meatballs, win/win.

That's an awesome idea! I don't have too many issues getting my 5 year old to eat her greens, but I may just pull this one on her picky daddy. lol...Thanks for sharing!

Chickpeas in the meatballs? Yes, a great way to add some greens to your meat!
I'm always trying to get the kids to eat greens "without noticing", chickpeas won't add a flavour to the meatballs and can be snuck in quite easily.

Halfway to a meatless monday.
Any more tips... it has got to be stuff that doesn't show up... or it will be rejected!
