I feel that eating a raw, colorful, seasonal & organic when possible meal once a day is the way to go. Here's one of my favorites. I created this for a woman who I cooked for that had Sjogren's disorder. Finely chopped up fresh, raw vegetables worked and it works for me, too, It is good summer food in the oppressively hot weather.
Cool, Raw Spinach Salad
In the food processor, separately: 1. One medium red onion (home grown) 2. 5 Carrots (organic) 3. One whole 9 oz. bag of ready to eat spinach (processed in two processor loads) 4. ½ cup of golden raisins 5. And whatever fresh vegetables you may have in your refrigerator. i.e. celery, cauliflower, broccoli, fresh basil….
Mix all in a large bowl as you food-process it.
How easy is that?
In a blender: Blend ½ cup of Italian olive oil, ¼ teaspoon of fresh lemon juice, about 1/8 teaspoon of ground white pepper, 1/8 teaspoon of dried basil (if you did not add fresh basil to the food processor) and ¼ teaspoon of sea salt. Blend until emulsified.
