Barbara, I think Morningstar Farms or Gardenburger makes a better veggie burger than Boca. Although, I think they have improved, they still are not my favorite!

I may have to try it, to use up the boca burgers in my freezer. I bought them in one of my attempts to eat a more vegetarian diet, and to me they taste like cardboard! I pull one out when I am desperate and cover it with salsa.

ChefSophie: The moza that I use cubed is already part skim. I'm thinking, if anything, the only thing I use that ISN'T diet friendly are the croutons. I may look for reduced fat versions.
Or, re: the cheese. Sargento makes a really good light moza cheese stick. I may chop up one of those instead, and cut out mucho calories and fat.

Lupo this sounds great. Do you think if you used shredded part skim mozzarella it would make it a bit diet friendlier?

This is something I came up with after buying a new flavor of boca burger! they have bruschetta patties, which are super tasty. I like this salad, it was wonderful.
1 Boca - Bruschetta Burger
1.5 cups hearts of romaine lettuce
3 oz grape tomatoes
1.5 oz Kraft Mozzarella Cheese (Cubed)
2 tbsp Ken's Steak House, Lite Caesar Salad Dressing
1/3 cup herb Seasoned Croutons
1. Cook the boca burger and then chop it up.
2. Toss the lettuce, tomatoes, cheese, croutons and dressing in a medium bowl. Cover with a lid and shake to blend well.
3. Dish up on a plate, top with boca burger and enjoy!

Hope ya'll like it! It's versatile, too! You can swap out with any flavor of boca burger and light dressing. Very basic, but so tasty. At least I think so!
