This sounds good to me. I am not a chicken eater, but know that I need to eat. This is well hidden in the other ingredients where I would be able to eat. I cannot sit down to a large chunk of chicken, breast, etc and enjoy it. I do eat ground chicken or turkey as I can blend with ot her items and enjoy
the flavor

Steve, I just looked. The book's more expensive on Half.com. Amazon's cheaper. Btw, parts one & three of the book are the latest info on health. You'll be amazed at some of the facts. Part two is the 21-day meal plan. Cocoa is the top antioxidant, that's why they named it the Chocolate Diet. Verry yummy.

I think I need to check out the Cariologist's Wife's Diet Cookbook. This sounds great as did the Blondies. I love things that will last for several weeks in the freezer.

I made myself hungry & I'm making it tonight! Btw, you can make a LOT, like tons, then put the leftovers into ziplocs & freeze, then thaw for the next time, freeze, thaw... I only cook maybe twice a week, but casseroles like this. Three skillets I sometimes have going. Then, leftovers into ziplocs, freeze, thaw... My freezer's STACKED with these frozen casseroles. I just decide in the morning what's for dinner, let it thaw in the sink, heat & eat when we come home.

No cooking! Just make sure it's still cool to the touch after it's thawed. Reheat, eat...It's the no-cooking part that's fantastic.

CHICKEN STROGANOFF (healthy variation on beef stronganoff made with fat free sour cream)
~~~~~~~
4 boneless, skinless chicken breast halves
ground pepper to taste
1 medium onion, chopped
1/2 pound fresh mushrooms, sliced
3/4 cup chicken broth
2 tbsp garlic, dried
2 tbsp tarragon, dried
1/2 container Fat Free Sour Cream (8 oz)

Spray skillet with cooking spray. Rinse chicken breasts, trim fat, cut into smaller pieces, & sprinkle with pepper.
Over medium-high heat, cook chicken until golden on one side. Turn, sautee other side. Push pieces to far side of skillet & pour off any drippings.
Add onion ; cook until softened. Add garlic, tarragon, & mushrooms; cook for 2 more minutes.
Stir in chicken broth, stir, & lower heat.
Add sour cream, & stir chicken into rest of mixture. Cover chicken with sauce & simmer for 5 minutes, stirring occasionally.

Makes 4 servings, 235 calories each

Serve over cooked noodles, if desired. (Dreamfield’s or Shirataki)

Dreamfield’s, 1/8th the carbs of regular pasta. Serving size: 2 oz (they swell), 190 calories, Total Fat 1 g, 0 g saturated fat, 0 mg cholesterol, 0 g sugar, total carbs 42 g (dietary carbs, 5 g)

Tofu Shirataki Noodles: 1/30th the carbs of regular pasta. Serving size 2 oz, 20 calories. Each liquid-filled, chilled, package contains 2 servings.
Total fat 0.5 g, saturated fat 0 g, cholesterol 0 mg, Sugar 0 g, Total carbs 3 g

Did I mention this diet is low carb AND low fat? The Cardiologist who wrote it is with the Dept of Health, & his co-author wife is a Heart Smart Chef.
