I'm not sure what veggies I'm having today, it's too early to think. BUT, had you done this yesterday, I think I'd have won a prize. I had salmon, grilled cherry tomatoes, green, red, and yellow peppers, onions, and corn. And topped it off with strawberry shortcake.

Today's challenge is to color your plate with as many fruits and veggies as is possible. Remember, many veggies and fruits are rich in vitamins, minerals, anti-oxidents, etc. Especially, green leafy ones.
