I cleaned out two drawers in my kitchen that have been begging to be done for a VERY long time, and I finished making the Belgium cookies I started last Tuesday. The cookie recipe makes 18 dozen, made in a pizzelle iron, two at a time. I split the dough in three and do 6 dozen at a time. It takes 1 1/2-2 hours to do 6 dozen. Each 'two cookie baking' takes about one minute, then you have to brush away the crumbs from the iron and wipe off the excess grease ( there's two pounds of butter in the dough), then scoop two more walnut-sized balls of the dough and start again. They are wrth the time and effort, everyone likes them. AND, I only ate 1/3 of one, and that just to check if they were OK. My iron burned out so I borrowed a friends, and it makes the cookie thinner than my iron . They were ok like that, but I'd never try to ship them that thin, they're too fragile. I hope I can replace my iron, but it's not being made any more. Boston has an Italian section, and they sell pizzelle irons, but they're probably all like my friends, since pizzelles have to be very thin.

How about finally starting my taxes? I need to backtrack on expenses because I was lax on entering into Quickbooks. Now taxes, a 45 minute job at best because of such wonderful software, will take me 2 days of non-stop work to do the business and the personal. EGADS!
For me, it's all about creating a sensible budget, something I keep putting off. I have a lot of goals that I want to accomplish and most of them involve money. This month is supposed to be about getting that budget in place, so it's time to accept this challenge and do it.
I have had so much going on the past month and especially the past week, that I haven't been able to get things organized like I would like to.
I know this is going to sound terrible of me, but I have the Christmas stuff down, just not packed away. Right now it is sitting in our spare bedroom. Yeah, I know Christmas was over a while back, but between the mess the changes in medicine made of my system and how I felt, along with all the activities my son is now having with his homeschool groups, as well as my husband's horrendous work hours, well....the more important things rose to the top and the other, like packing away the Christmas stuff, kind of slid to the back. So making this week a priority to get things back into order, as I am stressing over things being out of place a bit. I have never let things slide this far behind before.
