Reneetp ~ Yes for cooking spray. I use coconut oil spray on my muffin tins when I make egg muffins and even when I make mini meatloaves. Does make clean up easier. I also spray my broiler pan with some coconut oil before using it.

Last night I had fruit for dinner. Was still full late lunch. I had bananas, strawberries, blueberries and red grapes.

Hi Ive used the mini loaf pans but not muffin cups. do you use cooking spray on the pan first for easier clean up? Just wondering. I'm looking to make some "make ahead" meals and these sound perfect!

Sweet potato soup with crushed bacon garnish created by my wonderful wife Sandy. I made a Kale/celery/cucumber /mixed fruit/chia, hemp seed/ paleo protein powder smoothie to drink, side salad sprinkled lightly with Mediterranean black pepper/sea salt. Then for dessert she added baked orange/citrus bars with orange juice, zest, organic vanilla with an almond flour crust....We don't usually have dessert but a small portion of a paleo dessert was just right...Enough soup left over to take to work to eat with my romaine salad at lunch. emoticon emoticon

Well I tried a butternut squash soup for dinner with coconut fried shrimp and I was really not happy with either. The shrimp was very bland and not really crispy and the soup was horrible! I have only had it one other time and it was store bought and I did like it but this was really not good. Hoping tomorrow's crock pot beef tacos will be better. emoticon

LEGAMIX - What do you make your meatloaf with? I just made some the other day and used ground beef, sausage, chopped onion, an orange bell pepper, an egg and some seasonings. It was really tasty, but ended up a little dry. I think perhaps that's why regular meatloaf recipes add something bready because it helps to retain moisture. I'm stumped on what to add to make it more moist.
