It has been awhile since I looked at my Paleo Book. I am going to try to be here more and another team less. What I have found is that I need to be talking to people like me who are interested in nutrition.

what I had for dinner was
1 Cup of kale
2 oz of lean ground beef
celery
Peanut butter
1/4 cup raisins.
1/8 cup walnuts.

So if my memory serves me, Paleo is
no grains
no sugar
No dairy
am I wrong?

I have been on a pretty restrictive diet for the past 6 days and I feel great, but today is the day that I am really hungry and I don't want to blow it.

I had "spaghetti" meatball nests. A little nest of spaghetti squash in a muffin cup, pour egg over it and top it off with a venison meatball Pop it in the oven with some tomato sauce and it was good to go! Yummy! Got the recipe from OMGpaleo.com (?) and tweaked it a bit to what I had on hand.
Salad with red wine vinegar and olive oil on the side, and a kiwi for dessert.

We had chicken thighs and walnuts grilled in coconut oil and a salad with a litlle bit of olive oil for dressing. The salad was dark green leafies (spinach, collard greens, etc), bell pepper, tomato and cucumber. Yummy!

I had to eat on the run. I packed "fresh" sliced mushrooms and cherry tomatoes and some lettuce. Went through a drive thru at Arbys. They always ask If I'm serious when I get a bunless roast beef sandwich. I made lettuce/roast beef rollups and had tomatoes and mushrooms as finger food.

We had chicken Casar salad, and then some leftover chili. the chili was not paleo, in that it had beans, but it was yummy, and I haven't seen any ill effects yet.

I admit to trying to keep a bag of either prepped coleslaw or brocolli slaw in the fridge at all times. I use them to stretch all kinds of family meals. I use them instead of noodles for pasta night all the time. I use it to stretch out sloppy joes instead of a bun. I put it in a bowl with all but the rice for a sushi salad on sushi night. etc etc. Most of the time I am convinced that the crunch actually improves over the original.

last night we had grilled chicken thighs (with Franks Hot Sauce, love that stuff), quinoa which I will eat if I'm starving but I passed on last night, and huge green salad w/ tons of veggies & greens.

MRSKATEDUVALL, I LOVE cabbage rolls!! That has to be a much easier way to do it! I have also made "Hamburger Helper" with cabbage and ground beef, no sauce and it's quite yummy especially if you burn the cabbage a bit.

It's St Patrick's Day - so Corned Beef is in the crock pot with onion, (sweet) potatoes, carrots and beets - cabbage goes in when I get home. I did make one concession - 1 Guiness Stout went in as well.

Maybe technically it's two concessions as I used Costco's prepared Corned Beef and I didn't even look at the ingredients to see if they were all "OK".

I'm having the last cup & half of this homemade (by someone else) Chicken soup! Has celery, potatoes, Carrots and chicken breast chunks. Also some mozzarella cheese.

It suppose to get down to 2 degrees here in Arkansas. Triggers that comfort food mood. Was thinking about grilled cheese. Wonder how it would do putting cheese on cabbage leaf! Have to figure out how not to get the leaf to soft, LOL

I tried out a new twist on chili too! I made a sweet potato/ground turkey chili (subbed out all the beans for the sweet potatoes) and it was seriously the best chili I've ever had, with only a few ingredients!!! The sweet potato takes on the flavor of whatever you cook it in, so it tasted AMAZING seasoned with cumin. I didn't have any on hand so I didn't use them but diced tomatoes would've been a great addition to this dish. Thank me later ;)

1 lb ground turkey
1 diced onion (small)
4 cups sweet potatoes
3 cans tomato sauce (8oz cans)
1 tsp Texas Pete (Ok, I love this stuff...I may have added a bit more)
Cumin to taste (not everybody likes this, but I love it...so I didn't use it sparingly)
1 1/2 tsp pepper
2 tsp salt
4 cups of water

Sunday- roasted zucchini "lasagna" with meat sauce

Last night, I tried something thrown together.... I made a Paleo sauce: ground beef (can't afford grass-fed, so do the best I can) with an onion, plenty of garlic, cubed eggplant, tomatoes, Italian seasoning (dry), and some fresh basil.
THEN I used my brand new spiralizer and made spaghetti from zucchini! How fun!!! But I don't know really how to cook it, so I just tossed it into the sauce while it was simmering to soften it.
It was actually pretty good! and colorful. Surprised how filling the eggplant made it - it was like tofu or big mushrooms or something.
Anyway, I ate about 1/4-1/3 of the whole thing and put the rest in serving containers for when I don't want to cook. :D Yeah Paleo! Loving real food.
