I did something real similar to this for Mother's Day because you can make several at one time. I used a muffin tin, lined with ham. Add whatever ingredients someone wants. We used bacon, onion & mushrooms. Broccoli works well, too. Then just crack an egg over the top. Bake for about 20 minutes, depending on how well you like your eggs & you're done.

I use swiss chard in place of spinach a lot. I bet it would be yummy in this.

I made a breakfast casserole a little differently and it was awesome!! I used the small square Pyrex dishes and made 6 for the week, but you could use what you have. For each serving:
2oz bulk sausage of your choice, raw.
2 eggs
half handful chopped onions
full handfull fresh baby spinach, stems trimmed
1-2 large mushrooms, thickly sliced

Spray dish of choice with olive oil spray. Mash sausage into dish like a pastry crust. Top with onions. Top with spinach. Add scrambled eggs. Top with mushrooms, arranging like a crust. I also season each layer lightly with salt, pepper, garlic powder and onion powder. Bake at 325 for 15 minutes, rotate pan and bake until set. If using a large dish, portion for servings. The small dishes I used fit perfectly into a sandwich sized rubbermaid container.

If you don't like spinach, I have also done this with asparagus and broccoli. Same method. You can also line it with bacon, but it doesn't crisp up. What I did was line with bacon and then when I reheated, put it upside dow under the broiler to crisp it. Yummy!
