Thanks Ramona... to add to this...

People interested in really finding out what foods cause inflammation or stall weight loss should really consider doing a 30 day elimination diet I did this last year and found that potatoes and other questionable foods did not cause inflammation or stall my weight loss. Controlling/limiting consumption of starchy carbs in general is more of an issue for me in regards to weight loss. I follow a low carb paleo/primal hybrid lifestyle.

Just because people do wonder why/when the lines blur... potatoes are a debatable food... especially if weight management and/or inflammation are part of your reasons for going paleo in the first place... and if potatoes are a problem for you then so will peppers likely be (and tater tots are so not primal/paleo, lol):

I find breakfast difficult just cause I don't like to give myself the time to make anything. That's why I have really been liking my breakfast egg muffins. Its easy, I make them Sunday's and then freeze them. Just pop them in the microwave for a minute and I have breakfast ready

In muffin tray
-Spray with Pam or some sort of spray/oil
-dust with rice flour (they tend to stick and this helps)
-microwave tater tots or some sort of potatoe
-add 3 tater tots to bottom of each muffin tin, pat down with the bottom of a glass to flatten out
-top with diced veggies and meat (I like red and yellow peppers, chives, crumbled bacon or crumbled sausage, shredded spinach etc..)
-in measuring cup whisk eggs together with dill and any other seasoning you like (use about 8-9 eggs for 12 muffin trays)
-pour egg on top of everything in muffin tin

-bake at 350 for 20-30 min. cool and pop out. Freeze and eat!!


Delicious!

I tried to make a Paleo lasagna, and it was an epic fail as a "lasagna", but actually turned out to be a pretty good layered casserole. Beefzanya? Zuke-anya? Not sure, but it tasted delish.

I basically just took my regular method and replaced the noodles with zucchini and the cheese layers with a seasoned cauliflower mash.

The only thing I really missed was the half inch layer of cheeses on top, but that's when I was still trying to call it a lasagna.

This is great! I love reading other people's meal ideas. My newest dinner meals have been Italian:

1. "Parmesan" Chicken (breaded with almond flour, no cheese) with spaghetti squash, marinara sauce and green beans.

2. Italian meatballs (using grass-fed beef and almond flour instead of breadcrumbs) with spaghetti squash and broccoli.

Yum - I will have to try that. I like frittatas with eggs, lots of veggies (favorites are asparagus and zucchini) and sometimes potatoes.

This sounds weird, but I like eating egg drop soup in the morning. It kicks up my metabolism for the rest of the day.

I love pork (I do a lot of pork loins in the crockpot) with sliced apple (I don't cook the apple just slice it up and eat it fresh with the pork, and a side of cauliflower rice. It's a healthy spin on pork hops and apple sauce I suppose.
Another favorite is chicken with pinneape or watermelon and a side of asparagus, love this meal even though it sounds odd lol

Cauliflower rice has become my favorite staple when I crave comfort food. I take the cauliflower raw florets place hen in a food processor and out it on chop for like 20-30 seconds top. Take that (it should look like rice) and put in a frying lab with a smudge of coconut oil once its fried up a little unlike to add dried chives, basil, and garlic it's tasty.

new to this diet but from what I have read so far, it looks like not a lot of adjustments are needed, I like the sombo of fruit , veggie and meat, does anyone have a favorite combo ? I am going to create a list of possible combos, such as chicken and orange , not a fish fan but have been looking for some that I can tolerate , I don't eat out a lot so that makes it easier, but please share any favorites you have, love new ideas! thanks

The recipe makes six big waffles (3/4 cup of batter).. and it's per waffle... they are not low calorie! but they are made with "good for you" stuff and are a fantastic treat.... I had mine with some blueberries on top and a side of Chicken Breast which was my own version of "fried chicken and waffles" a southern dish... the whole meal was 413 calories and I felt like I was cheating big time! HA

1 medium apple, peeled and cored
1 C smooth almond butter (
2 medium eggs
1 TBSP arrowroot powder
1 TBSP vanilla extract
1/2 tsp baking soda

puree the banana and apple
using the wisk attachment on your mixer, fluff up the almond butter
add the banana/apple puree to the almond butter
add everything else
put in your waffle maker!

Ginger-Grilled Salmon

Ginger and salmon blend together perfectly. You'll enjoy the flavor almost as much as you will the health benefits!

Ingredients

■1 tsp Freshly Ground Ginger
■1 tsp minced Garlic
■1/3 cup Reduced Sodium Soy Sauce
■1/4 cup Orange Juice
■Stevia, to desired sweetness
■1/2 sliced Onion
■Three, 3.5 oz Salmon Filets
■Orange Rind


Directions

1.Combine ginger, garlic, soy sauce, orange juice, and Stevia in a bag.
2.Add the salmon and onions to the bag and let sit a few hours to marinate, flipping the bag after 1.5 hours.
3.Cook salmon on grill until it flakes easily with a fork.
4.While cooking, brush salmon with any excess marinade.
5.When done, sprinkle with orange rind and serve.

Very new to Paleo (day 5). This week I cooked a turkey burger, the put a fried egg on top. Only one rough day with breakfast. I was juicing beet greens with Kale and put my Vitamix on high so my beverage was warm. It was not good, i could not wait for lunch.

This weekend I cooked up a bluefish fillet in the skillet for breakfast. A little ghee and a little tarragon and cardamom, and I was good to go. This morning I had Swiss chard (the last from my garden) sauteed up with fried eggs and a dollop of plain yogurt (for the pro-biotics).

Right now I'm not eating milk or cheese, but I will still eat quality yogurt from reliable sources (no Yo-Plait here). I limit the amounts, and only plain or vanilla.

Got rid of the ticker cuz my scale decided to flatter me unduly. I haven't re-gained, just got a better, honest, scale.

Just because you steam it, doesn't mean you can't add herbs and spices. (A gripe at those insipid restaurant "healthy choice" menu selections.)

Tell ya what I had tonight that was sooooo delicious! I grated a handful of walnuts, then used I as a coating on some tilapia.. Put a light coating of olive oil, grated on the walnuts. Placed it in a cast iron skillet with some raw mushrooms and baked it all at 350 for 10 minutes... It was so flipping good. Being a good southern girl... I am used to breading and frying everything. I found this to a lovely substitute. Much healthier. Yum!

Due to a recent injury, I haven't been able to cook for the last three months. You might imagine the challenges this raises for eating Paleo. My go-to breakfast is a large jar of mixed nuts. It worked for me while I was wheelchair bound at home and now that I'm back to work, it's a portable feast. The nuts also work for those munchie moments, when the breakroom goodies or vending machines are calling.

One of our teammates, JANAMP09, mentioned that breakfast was getting boring so I thought I would offer some meal ideas that I actually use, not only for breakfast for all my meals, but I'll start with breakfast now.

1.) Apples sauteed in butter with walnuts or pecans
Scrambled eggs with crumbled bacon or sausage
Green tea

2.) Veggie/egg scramble... saute' spinach/zucchini/green onions ... add bacon/sausage if desired
1/2 cup fresh blueberries

3.) Mini Crustless Quiche

This is a great weekend recipe that will keep giving for much of the week ahead.

Cook lb. meat of choice. Nitrate-free bacon or ground pork with some crushed fennel seed works well. Saute cup veggies of choice such as mushrooms, white onion, red bell pepper, spinach or scallions. Mix together with -1/3 cup cheese of choice, omit if not eating dairy. Set aside.

Whisk 5 eggs and cup milk, and pour into muffin tins. (Use foil cups if desired.) Add meat and veggie blend to each cup of egg mixture.

Bake at 325 degrees Fahrenheit for 25 minutes or until golden brown.

These can be stored in the fridge until they are ready to be eaten.

4.) Breakfast Salad

Get a heaping serving of veggies and add wedges of hard boiled eggs and shredded bacon to fresh spinach leaves. Throw in some apple slices or nuts if you want. Store the night before in small sealed bowl. The next morning top it off with some olive oil and vinegar.
