What a great combo! I usually have these both left over since lettuce and tomato go the fastest. Now I will have an idea what to do with the cucumber and radish if I don't want to go to the store to get more salad fixings but still need a veggie for dinner. Sometimes, my husband will marinate cucumber in EVOO, balsalmic vinegar and S&P. It is delicous!

Can't wait to try this. We have some pork tenderloin we will grill and shred. My hubby will put bbq sauce on his but this sounds like it would be yummy on mine. Kind of like a slaw?

Egalitaire, this was so good. I was sorry I had no cilantro to put in, and chose not quite so much ginger, but it was very good, and easy. A great way to use zucchini, too. I ate with mayo the first day, topped it with tuna salad the second day, and this morning I scrambled the rest into my eggs. I will be making this recipe many times this summer. Thank you.

I make this about once a week - easy to make and tasty - Imo.
1 bunch radishes - chopped 1 cucumber - chopped 3 green onions - chopped 1 zucchini - shredded 1 handful cilantro - chopped 2 Tbsp ginger - shredded (to taste - I like ginger) salt and pepper to taste
As a "dressing", I use homemade mayo or if I have a well ripened avocado, I mash it and combine.
