I made this last week and it was good, but high calorie. To flip it, place another pan on top of the half-baked pizza, turn them over together, remove the parchment and put it back on first pan, put pizza back and bake it the remainder time.
It tasted like real whole grain pizza crust to me -- without the grain ;-).

Actually, we were making a pizza for my non-paleo husband and I wanted to bake them both at the same time, so I used a higher temp for a shorter period of time. It worked fine.

I used an almond meal pizza crust recipe out of the Everyday Paleo cookbook by Sara Fragoso. It worked decent enough. I suggest making the crust as thin as you can to get a good crunch on it otherwise it's like eating it on a slice of bread.

I've found that using a coconut flour tortilla recipe, and cooking the tortilla until it is really nicely browned works well for me. It MUST be cooked longer than for a soft tortilla or it won't hold up to the toppings. Cook it, toast it if necessary in a toaster oven or the oven until almost but not quite dried out, take it out and top it. There are a lot of tortilla recipes out there. Mine calls for egg white (or egg beaters), coconut flour, baking soda, water. sorry I don't have it at my fingertips.

I tried this recipe. It was okay, but not quite what I was looking for. Pizza crust is tough on this diet if you want something that holds together like the real thing. I might try that ground beef crust one of these days, but sounds like that one will be eaten with a fork as well.

Rayray, I noticed that you specified that dairy is not ok. Are you wanting to replace the cheese also, then? I was trying to picture what would look like pizza and fit the paleo bill.... Everything that would be white and creamy IS dairy.. so I had the thought of replacing the cheese with shredded carrots....? So ground beef crust, pizza sauce and toppings with carrots? Not sure how that would work.. just tryin' to think. I hope you find something that works well for your situation. :)

+1 on the "meatza"! Looove doing that. (just made it this weekend in fact. :)

Otherwise, for a crust, the zucchini works pretty well - shred and dry it, then mix it with some egg and spread thin on parchment paper. Bake till it starts to brown then top. Treat it like thin crust - no heavy toppings or it doesn't hold together very well.

If you are looking for an alternative to wheat/bread crusts, there are a number of recipes out there for eggplant and/or zucchini crust pizza.

I haven't tried any myself so can't make a specific recommendation, but if you google them you will find many recipes - you if you like any - let us know how it worked out for you.

I've found a decent number of paleo pizza recipes, but the first one I tried was... really, really sad. Not tasty at all. And pizza is one of my primary junk foods so I need to find SOMETHING. Salt is okay, dairy isn't.

So, what GOOD paleo pizza recipes fit the bill? Thanks, guys!
