Let us know what you think! They're a fave in our house... I did finally get some coconut flour and it works a lot better than the almond meal. You need about 2-3x the amount of almond as you do coconut. Still is tasty, though!

I'm thinking that I may try it with pumpkin instead of sweet potato, since I've been able to score a few baking pumpkins that I've got all roasted and ready to be used! :)

Dori - thanks for the input! I forget about pumpkin!

I had issues with the amount of sweet potato (I mean really, what /exactly/ is 'medium' sized?) But in the comments someone posted they used an 8 oz potato and it yielded 3/4 cup, so that's what I went with. :)

I've made this recipe several times, and we LOVE it. However, since the recipe doesn't say what size sweet potato to use, I substituted a half can of pumpkin and 1/2 cup of applesauce (or you could just use a whole can of pumpkin). We also add raisins or dried cranberries if we are in the mood, and/or chopped walnuts. This is a very nice, moist brownie. The only thing is, we line the pan with parchment and oil it, then chill the baked brownies before cutting or removing from the pan. They may crumble otherwise.

We use the other half can of pumpkin in a recipe for almond butter pumpkin brownies which are also very good.

This is a case of "never say never"... I never thought I'd be posting a knock off dessert recipe. My thinking is and always has been - if you're gonna do it, do it. In the words of the Whole9/Whole30 peeps - don't "paleo-ify" dessert.

BUT my hubby is finally on board with making a switch to get away from gluten, and he's a recovering sugar fiend... wanted to meet him where he was at to help him on the way...

I don't have coconut flour, so I subbed a bit extra almond flour and let the batter rest for a bit to thicken.

TASTY!

Not Brownies... but very tasty- the hubby went back for another piece! I like that it didn't call for replacement baking mix, or any sort of odd ingredients... And really liked that I didn't feel like I'd eaten sweets.
