This recipe has honey and is about 35 net carbs as a side dish, so if you are really low carb, or don't eat honey, probably won't fit for you. I have this about twice a month and am really mindful of how many other carbs I input on the designated day. Here goes.
Butternut Squash, 6 cup, cubes (I use one squash, so depends on size) Sweet potato, 2 cup, cubed (two medium) Pears, fresh, 3 pear, medium Ginger, 3 Tbsp grated fresh Honey, 3 Tbsp Butter, unsalted, 4 Tbsp
Preheat oven to 350. Peel and cube squash, pears and potatoes. Put in casserole dish topped with grated ginger and honey When veggies can be pierced easily with a fork, add butter and mash.
Makes about 8 side servings - 35 net carbs/serving
