The flour I personally use is this one; www.amazon.com/Azukar-Organics-Natur
al
-Organic-32-Ounce/dp/B0045TSUYK/ref=R>sr_1_12?ie=UTF8&qid=1334773696&sr=8-12
but it is currently unavailable so I that is why I picked the other organic one. But the one that I have been using really has a similar texture to standard flour. Hope this helps. Just keep messing with it until its perfect. :)

Faerie,
that's a different brand from what I have used. Mine is this one:

ou

I was planning to try this one soon as I have liked other products from them:

I suspect they may all have different fat content which could affect the result. Maybe I'll experiment with adding some coconutoil as well.

I always get my flour on Amazon and if the recipe didn't have baking soda in it; I always put about 1/2 teaspoon (when I make a half batch) in mine and I use coconut milk in the carton from trader joes. They turn out great every time now and I have them at least 1x per week.

I tried making coconut flour pancakes and mine were tasty but did not hold together very well. I may have to try adding baking soda. Thanks!

These are the BEST pancakes I have ever had! www.nourishingdays.com/2010/07/fluff

I use to eat almond flour pancakes but these have a better texture, they are high in fiber and very healthy for you. I love to serve them with some apple sauce or fresh berries on top of them!
