I know the idea of scrambling eggs is not new - here's my take on the classic.
4 eggs, whisked
1 T - 18% cream
40g - feta cheese, crumbled
1 - green onion, chopped
2 - 3 T - cilantro, chopped
1 t - turmeric
2 t - ginger, fresh shredded
2 C - spinach, baby or ripped into smaller pieces
pepper to taste
salt to taste (I don't think it needs it, but some do, so your choice)
bacon fat for the pan
Whisk first 7 ingredients in a bowl, then add spinach. Cook in a pan coated with bacon fat or coconut oil. Stir frequently, almost constantly (keeps the eggs fluffy). Add pepper and salt to taste.
Not including the bacon fat, recipe has:
5.8 net carbs
I dont eat again for 4-5 hours after this breakfast.
