I know many shun bananas on paleo, but I still enjoy moderation. If you are craving a sweet, hot breakfast (missing oatmeal?) try this.
1 whole egg and 2 egg whites, beaten
1 ripe banana, mashed
Cinnamon, vanilla to taste
1. Combine all ingredients and cook over medium heat as you would scrambled eggs. It will take longer.
2. Here is the weird part...top with about 1/2 tbsp of almond butter, allow it to melt and stir.
Sounds really weird,but it is totally delicous. I served it up in a bowl.

Sounds yummy! I just started doing a breakfast salad with hard boiled egg and bacon, I'm shocked at how much I like it.

Sounds really good......I would halve the recipe for myself or I wouldn't be able to finish it....left over eggs just don't work for me. :)

I know the idea of scrambling eggs is not new - here's my take on the classic.
4 eggs, whisked
1 T - 18% cream
40g - feta cheese, crumbled
1 - green onion, chopped
2 - 3 T - cilantro, chopped
1 t - turmeric
2 t - ginger, fresh shredded
2 C - spinach, baby or ripped into smaller pieces
pepper to taste
salt to taste (I don't think it needs it, but some do, so your choice)
bacon fat for the pan
Whisk first 7 ingredients in a bowl, then add spinach. Cook in a pan coated with bacon fat or coconut oil. Stir frequently, almost constantly (keeps the eggs fluffy). Add pepper and salt to taste.
Not including the bacon fat, recipe has:
5.8 net carbs
I dont eat again for 4-5 hours after this breakfast.
