I'm looking forward to someone find the perfect crust. I caved the other day and got some nuun? bread. Or is naan. I'm not sure. But it was garlic and with everything I put on it it was amazing. A literal MOUNTAIN of deliciousness.... I didn't mind making it my 10 or 15% :D
But for those you can't have the gluten.... I'm sad for you :(

I have done something similar. There is a recipe in Everyday Paleo that's for stuffed portabella mushrooms that was sorta "pizza-ish." But, I'd like to find another crust to try. But, that recipe was good!
A few thoughts of my own: There are some interesting paleo cracker recipes that might make a good "Thin and crispy" crust. Might be worth a try.
Also, I've ordered pizza from the big chains without cheese for years. They always warn me that without cheese, the sauce and pepperoni will burn. Having worked at the hut, I know they're half right--bare sauce will burn and needs to be covered with meat or veggies or something and if it's just meat, the pepperoni will burn. However, if you put veggies UNDER the pepperoni, they perform the same function as the cheese and the pepperoni crisps up the normal way.
That said, I've only made paleo pizza once. It was a meatza, with a crust of ground meat.
I'm lazy though, so more often then not if I want pizza, I just order the real thing and count it as my 10%.

I have been trying to perfect this crust recipe. I think I'm closer each time. I think she is onto something here with her zucchini base. I also did it once with mushrooms added. I tried it once without the cheese and it was more like a flat soufflé than a crispy crust. That time I ran the zucchini through my juicer first and used the pulp. Very interesting.
If anyone else tries and gets it, PLUULEEZE tell me. Maybe I need to add in a portion of the coconut flour. Calorie counting or not, if I succeed in making a primal pizza crust just as good as old fashion I would eat pizza for every meal 10 days straight, so I don't think it would be wise to make it out of nut meal or all coconut flour. I would rather turn into a zucchini than an almond, I think.
It's primal - not paleo, so don't be offended. The French blood in me can not abide not eating cheese, but that's another topic.
Well, whatever crust you choose (I have done a lot of different things inclusing a cauliflower one), some sauce or olive oil and garlic, Italian Seasoning, crumbled sausage or pepperoni, sauteed mushrooms, green pepper and red onion.
Another one I have done is crust, olive oil and garlic, Italian seasoning, baby spinach, red onion, sausage, and sauteed mushrooms.
The onions and mushrooms get nice and brown and i hardly miss the cheese on these.
