How wonderful to see a stuffed mushroom recipe that doesn't list cheese as an ingredient! As one who is allergic to dairy, I checked this out against my better judgement but got a very pleasant surprise. I'm looking forward to trying this recipe. Thanks for sharing it.
that looks really good! I have other recipes that cook bacon and then cook onions in the bacon fat--like Beef Burgundy for one. It is SUCH a good way to start anything that you want to infuse great flavor into.

4 Portabello Mushrooms 2 Cups of Spinach 1/2 Onion Diced 4 Strips of Bacon 1 Roma Tomato 5 Eggs Olive Oil Sea Salt / Pepper
Preheat oven to 400 degrees Wash Mushrooms and remove stems Drizzle top and bottom of mushrooms with a little bit of olive oil and sea salt and pepper Place mushrooms top down in oven for 15 minutes While mushrooms are baking, fry bacon. Remove bacon and sautee onions in the bacon fat (optional) add Spinach Add eggs Remove mushrooms and fill with spinach / onion / eggs Top with bacon and diced tomatoes
