Sounds similar to my breakfast! I LOVE cabbage for breakfast - spring mix is good too, though I don't heat that...to my cabbage, I add cooked ham, bacon, chicken, whatever is around and then fry 2 eggs, leave the yolk runny and put that in...mix it all up...yum!

Lol, Cindy; it occurred to me after I posted that, to most people, it might seem more like a lunch dish. I have always preferred leftovers or meaty breakfasts over sweet, bread-y ones -- which is probably why the Paleo Diet is such a good fit for me.

I've been eating Paleo for just over a month and this has become a favorite quick and easy breakfast. It's an odd combination of tastes that seem to work well together.

olive oil
bagged cabbage slaw
canned diced green chiles
scrambled ground beef (which I keep on hand in the fridge)

Heat a little oil in a saucepan over medium high heat.
Throw in two handfuls of cabbage slaw. Stir-fry until tender-crisp.
Add 1/4 cup scrambled ground beef and one spoonful (2 Tbsp?) green chiles.
Turn off heat, cover until heated through. Eat.
