For all of those that said they were going to make this, did you? how did it turn out? all the recipes that I tried for "loafs" turn out rather gooey in the center so I was wondering. I would like to make this if it turns out for most people.

I am going to make this, but using coconut flour, buckwheat honey and stevia, fresh pumpkin and baking powder ( like from the flax bread recipe) pecans sound awesome as well. Pumpkin spice does too. I may make it in a cake pan and see how it holds up like a bar recipe, serving it with fresh whipped cream/stevia/nutmeg.
Thanks for the great idea.

I always use pumpkin....not pie pumpkins in regular baking or soups, etc. I just bake it uncovered after cleaning it out and then scoop out the contents and toss it in the food processor.

Does anyone have experience using fresh pumpkin in recipes like this? I have a windfall of free pumpkins and am not sure how to use them for baking there is a lot more water in them than the canned...

"I added a 1/2 tsp. of baking soda because I felt it needed some kind of leavening, I added 1 Tbs. of honey, and I substituted pumpkin pie spice for the cinnamon." This was what another person did, to address the leavening problem. I didn't see this, the first time I posted the recipe here. I made it without it the first time, and still liked it. Go figure. Some people also added Stevia (on top of the maple syrup or honey) to sweeten it up more. emoticon

I made this tonight, but I substituted banana for the pumpkin, and pecans for the almonds. It tasted like banana nut bread, and my bread loving husband thought it was awesome.

Thanks for that little review PrimalP. I will separate the eggs and let you know how that works.

d433.html That's the link. emoticon I guess I could have just linked the recipe. I made it once and it was awesome! It was a little on the flat side, I guess. It still had all the pumpkin taste that I was craving though! I forgot to mention the can of pumpkin in the recipe is 15oz.

Ooooh thanks for that! I think I will add a bit of liquid stevia extract if I think the sweetness needs to be increased.
YUM!!
emoticon

I notice that there's no leavening. I wonder if separating the eggs and whipping the whites and then folding them into the rest of the stuff would increase the lift.

PrimalPerfect--did you find it was a bit flat in texture? How much did it rise?

I swiped this from the PB forums. It's spectacular! I love this season, and I love pumpkin! It's perfect for those pumpkin cravings AND it's Primal/Paleo! In addition, if you have a sweet-tooth, you can use more honey in the recipe. Warning: It's addicting!! I suggest sharing your Pumpkin Loaf, that way you don't demolish the whole thing in one sitting (it's that good!) Or if you can't resist overindulging, don't make it that often.

Primal Pumpkin Loaf:

3/4 can pumpkin

1 cup almond meal

6 eggs

2 Tbsp honey (have used 4 Tbsp for more sweetness)

1 Tbsp ground cinnamon

Blend ingredients and pour into 9x5" baking pan. 350F for 50 minutes.
