I am only about a month into Paleo, and I just started leaning my cooking blog towards Paleo recipes. Here is my latest, which uses zucchini slices instead of lasagna pasta. It contains Parmesan cheese--cheese does not cause me inflammation or gastrointestinal distress, but if you have problems with cheese you can always omit it (this article is a great one for answering questions pertaining to including cheese in a primal diet: http://www.marksdailyapple.com/cheese-unhe
althy/).

I included a lot of herbs and vegetables so you won't even miss the pasta! I hope you enjoy it.
