Buttery Shallot Catfish (I have used Chicken and Tilapia) in Coconut Sauce - I think that was the correct name.

This was the easiest recipe and I thought it was amazing.

Brown Shallot in oil (I use Coconut) about 20-30 seconds - add 3Tbsp Butter, melt - add meat, cook each side about 4 minutes (first time had chicken on hand, second used tilapia) - once meat is done, remove and set aside - pour in 1/2 c Coconut Milk and juice of 1 lemon, boil 3 minutes - pour over meat when setting plate. I served it the first time with broiled asparagus the lemon gave a nice tart kick to it; the second time I served with green beans and forgot the lemon but it was still awesome.

If anyone tries I hope you enjoy it also. :)

Today I made the chicken, bacon, and avocado salad. I didn't make the dressing, and I didn't have onion (which would have been a nice touch), but other than that, my ingredients were quality. Boneless, skinless chicken thigh, good avocado, nitrate-free bacon, romaine lettuce, a quarter of an apple, some walnuts, and then just a touch of olive oil and balsamic vinegar for dressing. Delicious!

Of course, for chicken, bacon, and avocado, I really wouldn't have expected anything less. I'm just glad it was really as delicious as it sounded!

Alas, I don't have access to fresh mussels, either. Those are harder to find than the scallops... Although I've heard those Asian markets are good for that sort of stuff, so I might check one out soon.

LOL, you should submit your version to MDA! Do you have access to fresh mussels? They are ridiculously cheap here (huge mussel farms), we get a 2 lb. bag for $2 and what a feast they make. Once steamed you can use them cold in salads, just like clams.
My next recipe to try is the avocado/bacon/chicken salad- I'll use spinach rather than romaine and will definitely add the optional apple and nuts.

Oh, I also made, to the best of my ability, the Zesty Lemon-Lime Seafood Salad. When I say, "to the best of my ability," it's because I just can't afford crab and scallops out here! So I ended up using canned crab and canned clams instead. I'm sure that played a huge part. The salad was good, but not OMGZ-AMAZING! But like I said, I bet it's because I didn't have fresh crab and scallops. Still, it was a nice change of pace.

Today I am eating Mark's root vegetable hash with a fried egg. I used beef instead of pork and was too lazy to do the meat preparation. Since I had a huge cut of meat, I ended up making three recipes worth of hash. I had to cook it in my CrockPot instead of a pan because there's so much! But... it's delicious! Especially the beets -- they're my favorite flavor. Yay!

Last night we made the Mediterranean pork tenderloin. A few changes: toasted pine nuts, green onion, no spinach, also included the optional kalamata olives and the feta cheese. It was good but not smashing. Next time will use spinach, sun dried tomatoes, green olives, garlic and feta with a dash of dried oregano and basil. The meat was great, very moist and tender- we cooked it for 45 minutes at 375F and let it sit for 5 minutes before serving. emoticon

Actually, I tried the cilantro pesto with pork tenderloin, but took the suggestion to try it with mint instead of cilantro. I wasn't a fan of all the fish oil and sesame oil and stuff, so I stuck to just classic olive oil, mint, almonds, and the spices that I had in my cupboard. I thought the amount of coconut milk seemed extreme, so I only used a quarter cup. It made the perfect amount for each of us to have one lamb chop, and it was delicious! I feel like I basically invented a new recipe, but I do have pork and cilantro waiting to try the official version, too.

I look forward to the weekly contribution of recipes from members of MDA- I think it might be fun for us to be food critics when we have made one of the dishes. So here goes:

On Friday my DH and I made the pork tenderloin with cilantro pesto sauce- YUMMY! I would however add a bit of "heat" to the sauce with either some chili pepper flakes or a bit of chopped jalapeno and I would reduce the amount of coconut milk so the sauce is thicker. There is plenty of sauce for a second meal so tonight we're making a shrimp stir fry with red pepper, broccoli and zucchini and stirring the rest of the pesto into the mix upon serving.

Anyone else tried some of the MDA offerings? emoticon
