I just made a turkey stuffing that lacks bread crumbs. While I am not paleo, I am cutting bread way back.
Ground good quality pork sausage, onions, mushrooms, eggplant, fennel bulb (and/or celery), and apples.
Got rid of the ticker cuz my scale decided to flatter me unduly. I haven't re-gained, just got a better, honest, scale.
Just because you steam it, doesn't mean you can't add herbs and spices. (A gripe at those insipid restaurant "healthy choice" menu selections.)

I've heard of pork rinds, too. I also have seen some recipes where they use almond flour and/or dried unsweetened coconut.

I use pork rinds. Just put them in the food processor and add whatever spices you want. They work great! Even my son eats things "breaded" with them.
