Read and commented on a couple blogs and pages I was out numbered for dinner tonight, dad and Jonathan wanted to hit Humpty's after shopping at Planet Organic...Humpty's is fried food haven, hard to find healthy...but I choose the chef salad with dressing on the side. Only ate half the salad because of all the adds...managed to come in under 300 calories, so I was happy with that and now have lunch for tomorrow.

J0ette, **SIGH** Grilled tuna open faced sammies! I like to add a thin slice of tomato under the cheese. OK and a huge slab of avocado which isn't going to happen any time soon. Guess what I'll be having this weekend? (minus the avocado of course... lots of calories and right now not worth it.) Thx for the suggestion (and the blog comment)

Huddled. Checked out several blogs.. The one that really stuck out today was by BIGHAIRTEXAN. She has a wonderful way of thinking about "just do it". :)
Lunch today was broiled open face tuna sandwich. My tuna salad consisted of: tuna, celery, red onion, green pepper. Instead of mayo, i used bolthouse farms honey dijon greek yogurt dressing. Placed on a multigrain sandwich thin, then one slice of provolone cheese split in half to put on each piece. Broiled for just a few minutes in my toaster oven.

Joette, Sri racha is also called Rooster Sauce. (it has a rooster on the label) It's a vietnamese hot sauce found with other hot sauces. It's not HOT HOT in moderation and it actually has flavor. A few months ago Bon Apetit magazine had an article about it that it's the current "go to" ingredient w/ chefs. I loved how they said "It adds a certain je ne çais quois" to foods. I add it when I cook and it adds more of a ZIP than heat. Sometimes I add it at the table and then it's more of a heat thing. It's about the only hot sauce I use anymore.

Huddled! Read and commented on a couple blogs, left some messages and goodies. Dinner was quite yummy tonight. Made a Mediterranean chicken dish that I put together. It's cold. It's thick so if you wanted to heat it up it would definitely need more milk. But letting it sit overnight, you don't have to cook the oats. They get soft on their own.

OK this is one of my go-to breakfasts if I know I'm going to be on the go as soon as i get up.
It's called something like OATMEAL IN A JAR Take an 8 oz jar (or lidded container)
Add: 1/4 cup Quick Cook Oats (Not instant... the kind in the big round container that cooks for 1 minute 1/2 TBS chia seeds couple dashes of cinnamon 1/2 cup blueberries 1/4 med bananas 1/2 cup unsweetened almond milk or skim or whatever? (I use a bit more) Splenda or sweeter or choice
Put everything in a jar and shake so it's well mixed and leave overnight in refrigerator. Right before serving, add chopped nuts (1 TBS).
If you make it the night before it's a good grab and go breakfast.

We had a lot of fun with the challenge where we huddled everyday and visited blogs and sparkpages. We are bringing it here to the "Game Room" where it will have a more permanent place.
1. Post to the HUDDLE WALL - the more creative you become, the more exciting our wall will be.
2. Check out at least one team member's Sparkpage or blog - leave comments to encourage, send goodies or whatever moves you!
Try to do these two things everyday. Come back here to post any comments or thoughts, or simply let us know you did it.
As an added bonus - post a healthy meal you have had today. Sometimes we all struggle with being creative with our meals. You never know who you may spark to have something new and exciting to eat.
