Montana State University has developed an all purpose and a baking flour called Montina that I used for everything! I simply replace "normal people" flour with Montina in all my receipes from my husbands favorite oatmeal M&M cookies (GF oats) to gravy for biscuts & gravy. It also makes WONDERFUL cornbread. Its readily available at the local healthfood stores and at http://www.amazinggrains.com/ We're a little sheltered here in Montana, so we have to be creative!
