I like to make almond meal pancakes and freeze them for a quick low carb breakfast. Also I just learned how to make strawberry jam using chia seeds as thickener, which is great on the pancakes (but gives them more carbs - but very delicious ones and some fiber too!)
I'm not sure I have a "favorite" per se, but one of my favorite things to do is to pre-cook a lot of quinoa on Sunday to use during the week. I'll mix coconut milk, banana and peanut butter or grate some apple, with cinnamon, nutmeg and chopped walnuts for breakfast, or add veg and some type of bean (usually chickpeas) with salad dressing for lunches. Quick, easy and yummy, and still allows for lots of variation!
Simply being thankful makes life easier.

I love Pamela's Gluten free baking mix, bread mix and brownie mix. I use the baking mix to substitute for flour in most any recipe and find that the results are delicious. Also love Bob's red mill gluten free oatmeal and make lots of recipes using this. I add it to meatloaf and meatballs and also make cookies using it. I have used the Pamela's gluten free bread mix and made rolls for deli sandwiches and find that they travel well in lunches and for picnics. I also use Pamela's baking mix added to corn meal and spices to coat fish, prawn and eggplant for frying or oven baking. My favorite gluten free cookbook is Carol Fenster 1000 gluten free recipes and my favorite cake is the one off of the Hershey's baking cocoa box with baking mix substituted for the flour. Turns out delicious. I love to cook and my overall goal is to be able to make all of my favorite recipes gluten free and still taste delicious!! Smiles Barb
