I'm not sure I have a "favorite" per se, but one of my favorite things to do is to pre-cook a lot of quinoa on Sunday to use during the week. I'll mix coconut milk, banana and peanut butter or grate some apple, with cinnamon, nutmeg and chopped walnuts for breakfast, or add veg and some type of bean (usually chickpeas) with salad dressing for lunches. Quick, easy and yummy, and still allows for lots of variation!
Simply being thankful makes life easier.
