There's nothing to worry about with him, but I wonder how many well-intentioned chefs don't understand a gluten free diet. I wonder how much cross contamination there is in a restaurant. There are a few places that I completely trust, but for the most part, I cook.

Turned out that this guy was bogus. He was not a chef at the restaurant and only worked there for a few weeks. So nothing to worry about.

In Japan, there is a certificate or license hanging on the wall beside the health department certificates; to prepare a puffer fish, known to kill a person if the poison pouch is punctured putting this poison into the fish dish. I want to see a a similar Gluten-Free certificate for chef titles because in the wrong hands certain people go to the hospital or even die when gluten is not declared or proper warning is not shared.

Good job Baileys7of9. I kept reading conflicting info re: this person. Some articles said he was a waiter, some said "chef." Apparently, like you said, he was a waiter and did not serve gluten-food to those who ordered otherwise.

Like a lot of the comments said, for many people, the symptoms don't show up for a long time. They might not attribute it to that food.

That is really bad... somehow he got away with it - must have been those cases where the people were not gluten intolerant but chose to be gluten free. If they had been intolerant there would have been many complaints. emoticon
