I am fixing a Alfredo Sauce with Heartland Pasta which I am giving a try due to also being Type 2 diabetic...but Spelt is a great choice too. Serves 4
6 oz uncooked pasta
2 T. Butter
1 1/2 t flour
1 cup fat free half and half
1/3 cup grated Parmesan Cheese
1/2 t salt
2 T minced fresh Parsley or just sprinke dry
Cook pasta according to package directions
IN a large sauce pan melt butter Stir in flour until smooth.
Gradually add half and half. Bring to boil Cook and stir for 1 min or until thickened.
Drain pasta and stir into pan with sauce.
Stir in 1 lb. cooked Med shrimp peeled and deveined or cooked bite size chicken. Add Parmesan Cheese, salt and heat through. Sprinkke with the parsley.
Will have to find out the calories etc and post later.
