Green Smoothies is a great way to get in our much needed veggies and fruits! Make sure you have a good blender though! I buy organic bananas in bulk and then cut them into threes and freeze them in zip lock (only brand BPA free as far as I know) I also cut up organic papaya and apples, and avocados and freeze them as well. Then I buy frozen organic mangos, all different berries, and peaches. I use either coconut water or aloe vera juice for the liquid base along with a little lemon juice. I fill my blender 3/4 of the way with Kale, baby spinach, spring mix, or any of the other leafy greens (make sure to rotate your greens) Cover with the coconut water or aloe juice and lemon juice and turn it on high while you get your fruits ready. I always include an apple and papaya and some berries because of their amazing nutrients and i always use about 1.5 Bananas, but you can use whatever fruit you like, just make sure most of it is frozen! I always add a tablespoon or two of flaxmeal,and a scoop of chia seeds. I know it may sound gross, but i guarantee you if you mix it up and try it you will be amazed at how delicious they are. I run a daycare and when the kiddos hear the blender start up, they get so excited and can't wait for their smoothies. Give it a try!

I am fixing a Alfredo Sauce with Heartland Pasta which I am giving a try due to also being Type 2 diabetic...but Spelt is a great choice too. Serves 4 6 oz uncooked pasta 2 T. Butter 1 1/2 t flour 1 cup fat free half and half 1/3 cup grated Parmesan Cheese 1/2 t salt 2 T minced fresh Parsley or just sprinke dry Cook pasta according to package directions IN a large sauce pan melt butter Stir in flour until smooth. Gradually add half and half. Bring to boil Cook and stir for 1 min or until thickened. Drain pasta and stir into pan with sauce.
Stir in 1 lb. cooked Med shrimp peeled and deveined or cooked bite size chicken. Add Parmesan Cheese, salt and heat through. Sprinkke with the parsley. Will have to find out the calories etc and post later. Enjoy! It's light, healthier and Very Good!!
